Time 30m

Yield 4 servings

Number Of Ingredients 11

1 10-inch piece baguette
1 1/2 pounds tomatoes (about 5), quartered
Kosher salt
2 tablespoons extra-virgin olive oil
2 cloves garlic, thinly sliced
Pinch of red pepper flakes
4 6-ounce skinless, boneless chicken breasts
1/2 teaspoon dried oregano
4 ounces part-skim mozzarella cheese, thinly sliced
3 tablespoons shredded parmesan cheese
1/4 cup chopped fresh basil

Steps:

  • Cut off a 1 1/2-inch piece of the baguette and pulse in a food processor to make breadcrumbs. Add the tomatoes and 1/4 teaspoon salt and pulse until the tomatoes are finely chopped but not pureed. Heat 1 1/2 tablespoons olive oil in a medium skillet over medium heat; add the garlic and cook until just golden, about 1 minute. Add the red pepper flakes and tomato mixture and bring to a simmer; cook until the sauce thickens slightly, 8 to 10 minutes.
  • Meanwhile, preheat a grill to medium high. Toss the chicken with the remaining 1/2 tablespoon olive oil, the oregano and 1/4 teaspoon salt. Split the remaining baguette in half lengthwise and then cut in half to make 4 pieces.
  • Grill the bread, cut-side down, until lightly toasted. Grill the chicken until cooked through, about 5 minutes per side, topping with the mozzarella and covering during the last 2 minutes.
  • Spoon some tomato sauce onto the bread pieces and top with half of the parmesan. Top each with a chicken breast, then the remaining sauce. Sprinkle with basil and the remaining parmesan.

LAZY CHICKEN PARMESAN GRILLED CHEESE

Lazy Chicken Parmesan Grilled Cheese image

Wanted to eat a chicken Parmesan sub but didn't feel like spending the time cooking and breading chicken. So I opted to cut corners using frozen chicken patties and pre-prepared ingredients to make my life easier. Picked up the sub rolls and couldn't justify eating that many calories, so opted instead for sliced Italian bread and thin-sliced cheese. Turned out so surprisingly good, I thought I'd share. Enjoy!

Time 30m

Yield 4 servings

Number Of Ingredients 8

4 boneless, skinless chicken breast halves
Extra-virgin olive oil, for brushing
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
1 cup marinara sauce, store-bought or homemade
4 slices fresh mozzarella
4 tablespoons grated Parmesan

Steps:

  • Preheat an outdoor grill to medium-high. Make sure the grates are clean so the chicken doesn't stick.

Remove the plastic wrap and transfer to a baking sheet; repeat with the remaining chicken breasts. Brush both sides of each chicken cutlet lightly with oil.
  • Combine the salt, pepper and garlic powder in a small bowl and sprinkle evenly over both sides of the chicken cutlets. Place the chicken cutlets on the grill and cover the grill. Cook for 3 to 4 minutes. Flip and spread a few tablespoons marinara sauce over each cutlet and top with a couple pieces of mozzarella and 1 tablespoon Parmesan. Cover the grill and cook until the cheese is melted and the chicken is cooked through, 3 to 4 minutes longer. Serve hot.

Time 1h

Yield 2 serving(s)

Number Of Ingredients 23

1 tablespoon olive oil
2 garlic cloves, minced
1/4 of a yellow onion, chopped
2 -3 roma tomatoes, seeded and chopped
1 tablespoon tomato paste
1 teaspoon italian seasoning
1 pinch red pepper flakes (optional)
salt
1 pinch sugar
1 boneless skinless chicken breast, pounded 1/4 inch thickness
salt & pepper
1/3-1/2 cup flour
2 teaspoons italian seasoning, divided
1 egg
1 tablespoon olive oil
2/3 cup breadcrumbs
1/4 cup parmesan cheese
prepared tomato sauce (recipe above)
cooked chicken
Fontina cheese
deli rolls or French baguette
butter
fresh basil, ribboned

Steps:

  • For the Sauce: Heat the olive oil. Add the garlic and chopped onion; saute until soft. Add the chopped tomatoes, tomato paste (freeze leftover paste for another use) and remaining seasonings. Cover and simmer for about 20-30 minutes.
  • For the Breaded Chicken: In a shallow bowl, combine flour and 1 teaspoon Italian seasoning. In the second bowl, whisk the egg and olive oil. In the third, combine bread crumbs, the remaining teaspoon of Italian seasoning and Parmesan cheese. Dredge each piece in the flour, then the egg wash and lastly, the breading. Place cutlets on a foil-lined and greased baking sheet. Preheated oven at 375 degrees and bake for about 15-20 minutes, turning once. Do not overbake. Alternatively, breaded cutlets may be fried in a pat of butter and a drizzle of olive oil heated in a frying pan about 5 minutes on each side.
  • Butter each outerside of a deli roll and stack within the cooked chicken, tomato sauce, cheese and fresh basil. Grill on medium-low heat until bread is toasty and cheese is melted.
