4 banana, peeled and halved lengthwise
1 tablespoon brown sugar
2 teaspoons lemon juice
2 teaspoons honey
splash of orange juice

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Arrange bananas onto the prepared baking sheet. Sprinkle brown sugar, lemon juice, honey, and orange juice over the bananas; cover with aluminum foil.

1 tablespoon butter

2 cups well-shaken buttermilk

2 large eggs
Vegetable oil for waffle iron
For topping
2 tablespoons unsalted butter
2 firm-ripe large bananas, cut diagonally into 1/3-inch-thick slices

Steps:

  • Make waffles:
  • Put oven rack in middle position and put a large metal cooling rack directly on it. Preheat oven to 250°F and preheat waffle iron.
  • Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • Whisk together buttermilk, melted butter, and eggs in another bowl, then whisk into flour mixture until just combined.
  • Brush hot waffle iron lightly with vegetable oil and pour a slightly rounded 1/2 cup of batter into each waffle mold (see cooks' note, below). 8 bamboo skewers, soaked in water for at least 4 hours
4 unpeeled ripe bananas, ends trimmed and cut into 2-inch chunks
1 fresh pineapple, peeled, cored, and cut into 2-inch chunks
1/2 cup turbinado sugar or 1/3 cup cane syrup
Zest and juice of 1/2 lemon

  • 1. Make a lengthwise slice on the skin of each unpeeled banana chunk to allow easy peeling after bananas are grilled. Thread the fruit onto skewers, alternating chunks of banana and pineapple.

  • Slice the bananas, in their skins, in half crosswise and then lengthwise so each banana yields 4 pieces. Set aside on a clean platter. In a small bowl, combine the sugar and cinnamon. 4 bananas, peel on sliced through lenghtwise

  • In bowl, blend rum, honey and cinnamon. Reserve (I do this before we go and put it in a tupperware container).
