Time 45m

Yield 4 servings

Number Of Ingredients 12

8 skin-on chicken drumsticks (about 1 1/2 pounds)
1 1/4 teaspoons ground allspice
Cayenne pepper, to taste
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
3 tablespoons plus 1 teaspoon extra-virgin olive oil
Juice of 1 lemon
2 plums, halved and pitted
2 tablespoons honey
1 bunch broccoli, cut into florets
1/4 cup sliced almonds
1/2 cup plain low-fat yogurt

Steps:

  • Preheat a grill to medium. Season the chicken with 1 teaspoon allspice, 1/4 to 1/2 teaspoon cayenne, and salt and black pepper to taste; transfer to a large bowl and toss with 1 garlic clove, 2 tablespoons olive oil and half of the lemon juice. Toss the plums with 1 teaspoon olive oil, the remaining 1/4 teaspoon allspice and a pinch each of cayenne and salt in another large bowl.
  • Grill the chicken, turning occasionally, until marked, 10 minutes. Cover and continue grilling until cooked through, 15 to 20 minutes. (Move the chicken to a cooler part of the grill if it's getting too dark.) Grill the plums, flipping, until slightly softened, 5 minutes. Transfer the chicken and plums to a platter; brush the chicken with the honey.
  • Meanwhile, bring a large pot of salted water to a boil. Add the broccoli and cook until crisp-tender, about 3 minutes. Drain and rinse under cold water; pat dry and transfer to a medium bowl. Add the remaining 1 tablespoon olive oil and the almonds; season with salt and black pepper and toss to coat.
  • Whisk the yogurt with the remaining grated garlic and lemon juice in a small bowl; season with salt. Serve the chicken with the plums and broccoli; spoon the yogurt sauce over the broccoli.

GRILLED HOISIN BEEF

Grilled Hoisin Beef image

The (underrated) hoisin sauce is a thickened, fermented soy-sauce-like substance, flavored with chilies, garlic, vinegar, sugar, and, of course, exotic spices. It makes a great marinade. And unless you horribly overcook it, this skirt steak is juicy and tender.

Provided by Chef John

Categories     World Cuisine Recipes     Asian     Chinese

Time 2h18m

Yield 2

Number Of Ingredients 13

1 (1 pound) beef skirt steak
⅓ cup hoisin sauce
3 tablespoons Chinese vinegar (or sherry vinegar)
1 tablespoon soy sauce
2 teaspoons hot sauce
2 teaspoons sesame oil
1 tablespoon grated fresh ginger root
4 cloves garlic, finely minced
1 tablespoon packed brown sugar
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 green onion, light parts only, minced
Toasted sesame seeds

Steps:

  • Whisk hoisin sauce, vinegar, soy sauce, hot sauce, sesame oil, grated ginger, garlic, brown sugar, salt, and pepper together in a large mixing bowl.
  • Cut skirt steak crosswise into about 4 or 5 smaller pieces. Transfer steak into marinade and toss until all pieces are evenly coated. Cover with plastic wrap. Refrigerate; marinate at least 2 hours and up to 12 hours.
  • Line a baking pan with paper towels. Transfer pieces of steak to the paper towels and mop off some of the marinade.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Transfer steak pieces to grill. Cook to medium rare or medium, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read between 130 and 135 degrees F (about 54 degrees C). Thinner pieces might finish earlier. Transfer steak to a warm plate. Let rest for a few minutes.
  • Transfer steak to a warm serving platter and pour any accumulated juices over skirt steak. Sprinkle with sesame seeds and sliced green onions.

Tips:

  • Use fresh, ripe plums: Their natural sweetness will balance the savory flavors of the chicken and hoisin sauce.
  • Marinate the chicken for at least 30 minutes: This will help the flavors to penetrate the chicken and make it more tender.
  • Sear the chicken over high heat: This will create a nice caramelized crust on the outside while keeping the inside moist.
  • Reduce the hoisin sauce: This will concentrate the flavors and make it more syrupy.
  • Serve the chicken and plums over rice: This will help to soak up the delicious sauce.

Conclusion:

This grilled hoisin chicken and plums recipe is a perfect summer meal. It's easy to make, flavorful, and healthy. The chicken is tender and juicy, the plums are sweet and tangy, and the hoisin sauce is savory and slightly sweet. Serve this dish over rice for a complete meal that your family and friends will love.
