Portland chef Vitaly Paley makes these luscious skewers, an iconic food in the Republic of Georgia, for his Soviet-style pop-up restaurant, DaNet. For the most tender skewers, he recommends buying a boneless leg of lamb and cutting it up, rather than using lamb "stew meat" (which can come from the more gristly shoulder). Or use lamb loin, which is more expensive but has less fat and sinew. You'll need 8 (9 in.) metal skewers for this recipe. - Put onion, garlic, spices, herbs, vinegar, and salt in a food processor and process into a smooth, thickish marinade.

This shashlik recipe was brought over from what is now the Republic of Georgia in the early 1900s. Traditionally, the men gathered to "put down" the lamb, enjoying friendship along with the leftover wine. They used family heirloom skewers (designated by their unique twisted handles) to grill the meat over wood coals. This amazing, yet simple recipe, was served at my wedding. - Cut lemon in half and juice. Cut 2 rinds into chunks.

- Pound lamb pieces into 1/3" thick slices. Cut onion into 8ths and remove outer pieces for use. Need 24 onion pieces. Reserve rest of onion for another use. Put meat in sealable plastic bag with onion, thyme, pepper, olive oil. Mix well. Seal and refrigerate. Can be refrigerated for several days. Heat grill and Preheat oven to 150 degrees. Alternately thread lamb and onion slice onto skewer. Sprinkle with salt and grill, 3 minutes each side. Move to a baking sheet into warm oven to rest. Sprinkle with lemon juice and serve.

- Marinade: In a large bowl, beat together the grated onion, lemon juice, olive oil, salt and pepper.

- Mix the lamb with the lemon and juice, oil, garlic and rosemary. Season well. Cover with cling film and leave to chill for a few hours or, if possible, overnight.
- Thread the lamb onto large metal or wooden skewers, alternating with the peppers and onions. (If using wooden skewers, soak for 20 mins before using.)
- Get your coals hot, then put the lamb skewers over the heat and cook for about 5 mins until well coloured. Turn over and cook for a further 5-10 mins until cooked to your liking and nicely charred. To test if the lamb is done, put a large skewer into the middle of the meat and press down on the flesh. If the juice that runs from it is bloody, it's not cooked enough.
