1 pound unsalted butter
1/2 cup basil chiffonade
Salt and freshly ground pepper to taste
4 (2 1/2 pound) whole lobsters
2 tablespoons olive oil

Steps:

  • Combine the butter, basil, and salt and pepper to taste in a food processor and blend until smooth. Pack the mixture into a medium ramekin, cover with plastic wrap and refrigerate for at least 30 minutes. Split the lobsters in half lengthwise. Bring the knife down through the tail, making sure to cut just through the meat and to leave the shell connected. Lay the lobster open, leaving the two halves slightly attached. Pull off claws and legs from the lobsters and crack them slightly with the knife handle. Place the claws and legs on the grill over medium-low heat and cover with a pie pan. Cook them for 5 to 7 minutes per side. Brush the lobster bodies with the oil and season with salt and pepper to taste. Place them fleshside down on the grill over medium heat. Grill 8 to 10 minutes
  • Remove the lobsters and slather with the basil butter.

1 stick (8 tablespoons) unsalted butter, at room temperature
2 canned chipotle peppers in adobo, seeded and minced, plus 2 tablespoons adobo sauce
2 tablespoons lime juice plus 1 lime, cut into 8 wedges
Kosher salt and freshly ground black pepper
1/2 cup sour cream
8 ounces peeled and deveined large shrimp, tails removed
1 tablespoon tequila
1 tablespoon extra-virgin olive oil
1 1/2 teaspoons minced fresh cilantro plus 1 cup cilantro leaves
2 large chilled cooked lobster tails, split lengthwise
8 corn tortillas (6 inch)
1 cup julienned radishes
1 avocado, sliced
1 Fresno chile, thinly sliced

Steps:

  • Prepare a grill for medium-high heat.
  • In a mixer with the paddle attachment, combine the butter, chipotle peppers, 1 tablespoon of the adobo sauce and 1 tablespoon of the lime juice. Season with salt and pepper, then paddle the mixture until the ingredients are distributed evenly.
  • In a bowl, mix the sour cream with the remaining 1 tablespoon adobo sauce. Season with salt and pepper. Refrigerate until ready to use.
  • In a bowl, combine the shrimp, tequila, olive oil, minced cilantro and remaining 1 tablespoon lime juice. Season with salt and pepper.
  • Spread a heaping tablespoon of the butter mixture onto each lobster split. Put the lobster butter-side up on the grill, along with the shrimp. Grill the shrimp until just cooked through, about 3 minutes per side. Grill the lobster until the butter is melted and the meat is just heated through. Remove the lobster meat from the shells and chop into 3/4-inch pieces.
  • Grill the tortillas until warmed. Assemble the tacos by distributing the lobster and shrimp among the tortillas, then topping with the radishes, sliced avocado, Fresno chile slices, cilantro leaves and sour cream mixture. Serve with a lime wedge.

1 live lobster, about 1 to 1 1/2 pounds
1/4 olive oil

Steps:

  • Combine butter, parsley, chile flakes, garlic, lemon zest, salt, and pepper in a bowl; set aside. Using a cleaver or large chef's knife, split lobster in half lengthwise through its head and tail. Scoop out and discard the yellow-green tomalley and break off claws. Transfer lobster halves, shell side down, to a baking sheet; crack claws and place them on the baking sheet. Drizzle halves and claws with oil, and season with salt and pepper. Heat a charcoal grill or set a gas grill to high; bank coals or turn off burner on one side. 4 lobster tails, defrosted if frozen
lemon wedges, to serve
125g butter , softened
1 garlic clove , crushed
handful parsley leaves, finely chopped, plus extra to serve
1 tsp Dijon mustard
small pinch chilli powder , optional
1 lemon , juiced

Steps:

  • Make the butter by mixing together all the ingredients, then season and set aside. Can be made two days ahead. Remove from the fridge to soften before using.
  • Use kitchen scissors to cut along the tops of the lobster shells, then flip the tails over and crack the ribs of the shell. Use your fingers to open the shell and loosen the meat keeping it attached at the base and pull it half out. Use a knife to cut along the top of the tail without cutting all the way through and remove the vein if you see one. Sit the tail in a shallow roasting tray and add some butter to each one. Tails can be prepared a few hours ahead and chilled.
  • Heat the grill to high, then grill the lobster tails for 10 mins until cooked through. Put them on plates and drizzle with the butter from the pan, or pour the butter into a ramekin and put it in the middle of the table for dipping the lobster meat in. Serve with lemon wedges and scatter with extra parsley, if you like.

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Cut lobster tails lengthwise with poultry shears. Cut open claws to allow sauce to reach the meat.

2 bamboo skewers

Steps:

  • Whisk melted butter, parsley, and seafood seasoning together in a bowl. Refrigerate until ready to use.

½ cup salted butter, softened
2 tablespoons minced garlic
1 dash hot sauce
freshly ground black pepper to taste
4 (6 ounce) lobster tails
4 (10 inch) skewers
1 tablespoon olive oil, or to taste
kosher salt to taste
1 medium lemon, cut into wedges

Steps:

  • Combine butter, minced garlic, hot sauce, and pepper in a bowl; mix until fully combined. Set aside.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Butterfly lobster tails by cutting lengthwise through the centers of the hard top shells and about halfway through the top of the meat with kitchen shears.
