GRILLED MEXICAN CHICKEN BREAST

Grilled Mexican Chicken Breast image

This recipe is similar to tequila lime chicken without the tequila. : ) Prep time does not include marinating time.

Provided by Daily Inspiration S

Categories     Chicken

Time 40m

Number Of Ingredients 11

2 garlic cloves, minced
3 Tbsp fresh lime juice
3 Tbsp orange juice
1 tsp ground cumin
2 Tbsp cilantro, minced
1/2 jalapeno pepper, seeded and minced
1 tsp morton lite salt
1/4 tsp pepper
3 Tbsp oil
4 skinless, boneless chicken breasts pounded (i generally cut through the chicken breast lengthwise to make a thinner breast)
fat-free sour cream

Steps:

  • 1. Combine the first nine ingredients in a large bowl. Add the chicken breasts and toss to coat. Cover and refrigerate for as little as 30 minutes or up to 4 hours.
  • 2. Grill the chicken over medium heat until just cooked through, being careful not to overcook as they will dry out.
  • 3. Serve with a squeeze of lime juice and a dollop of fat-free sour cream.

Tips:

  • Choose the right cut of chicken: Bone-in, skin-on chicken breasts or thighs are best for grilling, as they will stay moist and flavorful.
  • Marinate the chicken: Marinating the chicken in a flavorful mixture of spices, herbs, and liquids will help to tenderize the meat and add flavor.
  • Preheat your grill: Make sure your grill is nice and hot before you add the chicken. This will help to create a nice sear and prevent the chicken from sticking.
  • Don't overcrowd the grill: If you overcrowd the grill, the chicken will not cook evenly. Leave some space between each piece of chicken so that the air can circulate.
  • Cook the chicken over indirect heat: This will help to prevent the chicken from burning. Once the chicken is cooked through, you can move it over direct heat to crisp up the skin.
  • Use a meat thermometer: The best way to ensure that the chicken is cooked through is to use a meat thermometer. The internal temperature of the chicken should reach 165 degrees Fahrenheit.
  • Let the chicken rest: Once the chicken is cooked, let it rest for a few minutes before carving. This will help the juices to redistribute throughout the meat.

Conclusion:

Grilled Mexican chicken is a delicious and flavorful dish that is perfect for a summer cookout. By following these tips, you can grill chicken that is moist, tender, and full of flavor. Serve the chicken with your favorite Mexican-inspired sides, such as grilled vegetables, rice, and beans. Enjoy!
