Time 1h

Yield 4 servings

Number Of Ingredients 14

8 ounces unsalted butter
2 ounces extra-virgin olive oil, plus more for searing
1 Vidalia onion, thin julienne
1 cup diced celery
4 cloves garlic, split in 1/2 and sliced paper thin
1 pound sweet Italian sausage, removed from casing
8 ounces baby spinach
1/2 cup croutons
3 cups chicken stock
3 ounces heavy cream
1/2 bunch flat-leaf Italian parsley, chopped
1 1/2 cups grated Parmigiano-Reggiano
Kosher salt and freshly ground black pepper
4 (8-ounce) bone-in center cut pork chops, frenched, marinated in extra-virgin olive oil, sliced shallots and Italian herbs

Steps:

  • Stuffing: In large a rondeau or heavy bottomed pot over medium-low heat, add butter and olive oil, then sweat onion, celery and garlic until translucent, about 3 minutes. Add sausage, and allow it to cook through, stirring often. Add spinach and toasted croutons. Mix well then add chicken stock, cream and parsley. Cook until thickens. Add cheese and season with kosher salt and freshly ground black pepper. Allow stuffing to cool.
  • Pork Chops: Preheat oven to 400 degrees F.
  • Make a 1-inch incision with a knife right next to the bone of the pork chop. Work the knife inside the pork chop to make a pocket for the stuffing. With a piping tool or simply with your hands, stuff the pork chop with the stuffing mixture until the pocket is packed well. Season the pork chop with salt and black pepper. Heat a large skillet and add oil. Sear both sides, about 1 minute. Place skillet in oven to roast for about 10 to 12 minutes, turning chops over half way through so as not to burn. Cook pork chop to medium, and the internal temperature registers 165 degrees F on an instant-read thermometer. Anything more than medium may dry out the chop.

BRINED, STUFFED AND GRILLED PORK CHOPS

Brined, Stuffed and Grilled Pork Chops image

I have recently started brining for all types of meats. It really does keep the meat juicy and tender, no more dried out meats for me. This may seem like a lot of ingredients, but it comes together quickly and easily and is well worth the effort! I have also used sourdough bread in place of the cornbread with equally good results. If you do not have access to the grill, these can be browned, then finished in the oven to an internal temp of 145 degrees. This is adapted from The Neelys on The Food Network. Prep time does not include brining time.

Tips:

Choose the Right Pork Chops: Select thick-cut pork chops (at least 1 inch thick) with good marbling for juiciness and flavor. Prepare the Sausage Stuffing: Use a variety of sausages, such as Italian sausage, bratwurst, or chorizo, for a flavorful stuffing. Cook the sausage until browned and season it with your favorite herbs and spices. Stuff the Pork Chops: Make a pocket in each pork chop to accommodate the sausage stuffing. Use a sharp knife to cut a slit in the side of each pork chop and carefully stuff it with the sausage mixture. Secure the Pork Chops: Secure the stuffed pork chops with toothpicks or kitchen twine to prevent the stuffing from falling out during cooking. Cook the Pork Chops: Grill the pork chops over medium heat for about 5-7 minutes per side, or until they reach an internal temperature of 145°F (63°C). You can also bake them in a preheated oven at 400°F (204°C) for about 20-25 minutes. Let the Pork Chops Rest: Before serving, let the pork chops rest for a few minutes to allow the juices to redistribute, resulting in more tender and flavorful meat.

Conclusion:

Grilled Sausage Stuffed Pork Chops is a delightful dish that combines the savory flavors of sausage and tender pork chops. By following these tips, you can create a delicious and impressive meal that is perfect for special occasions or everyday dinners. Enjoy the juicy, flavorful pork chops stuffed with a flavorful sausage mixture, grilled to perfection and served with your favorite sides.
