1 pound small purple potatoes, unpeeled, scrubbed
1/2 cup mayonnaise
1/4 cup fresh lemon juice
2 tablespoons Dijon mustard
2 teaspoons celery seeds
1/2 cup plus 1 tablespoon chopped green onions

Steps:

  • Prepare barbecue (medium-high heat). Cut sweet potatoes into quarters. Arrange on large sheet of foil. Cover with more foil and seal edges to enclose. (Can be prepared 6 hours ahead. Cover and refrigerate. Bring to room temperature before serving). Sprinkle salad with remaining 1 tablespoon green onions.

Tips:

  • For the best flavor, use a variety of fresh, ripe peppers.
  • If you don't have a grill, you can roast the peppers in the oven at 450 degrees Fahrenheit for about 20 minutes, or until they are charred and tender.
  • Be sure to let the peppers cool slightly before handling them, as they will be very hot.
  • To remove the skins from the peppers, simply place them in a paper bag and let them steam for a few minutes. The skins will then peel off easily.
  • This salad can be served as an appetizer, side dish, or main course.
