2 (14 ounce) packages extra-firm tofu, drained
½ cup sherry vinegar
½ cup low-sodium soy sauce
⅓ cup olive oil
1 teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon cayenne pepper
½ teaspoon dried marjoram or thyme
¼ teaspoon black pepper

Steps:

  • Wrap tofu in a clean dish towel and weight it with something heavy such as a large can; leave it to drain for 30 minutes.
  • Meanwhile, mix together remaining ingredients in a bowl.
  • Cut each piece of tofu crosswise into 6 thick slices and put it all in a baking dish. Pour marinade over tofu, turning to coat, and chill, covered, turning occasionally, at least 30 minutes or up to 48 hours. Longer is better, but shorter is totally fine.
  • Preheat a gas grill on high heat (450 degrees F to 650 degrees F) 10 minutes, then reduce heat to medium (325 degrees F to 375 degrees F)--or do whatever the equivalent is if you're using charcoal. Oil grate.
  • Transfer tofu from marinade (letting excess drip off and reserving marinade) to grill with a spatula. Cover grill and cook tofu, turning once, until well browned but before grill marks get black, 10 to 15 minutes total. Transfer tofu to a platter and cover with foil to keep warm.
  • Bring reserved marinade to a boil in a saucepan and boil until it reduces to about 1 cup, about 2 minutes. Pour over tofu and serve hot, warm, or at room temperature.

1/4 cup soy sauce
1/2 cup orange juice

1 cup sliced shiitake mushrooms
1 tablespoon Dijon mustard
3 green onions, chopped fine

Steps:

  • To a small non reactive bowl or dish combine marinade ingredients. Marinate tofu overnight.
  • Place tofu slices on hot grill and cook 4 to 5 minutes on each side. Place grilled slices in a warm place while making the sauce.
  • In a separate saucepan whisk together olive oil, milk, flour and vegetable broth. Add shiitake mushrooms and cook over medium heat, stirring occasionally, for 7 to 10 minutes or until the mushrooms are tender. Pour the mixture over grilled tofu. Serve immediately.

1 pound tofu, drained
Freshly ground black pepper, to taste
Sea salt, to taste
Soy sauce, to taste, Worcestershire sauce, steak sauce, or tamari will work
Miso Sauce, recipe follows
Scallions, slivered
Black sesame seeds, toasted, Several pinches
6 tablespoons white miso
2 teaspoons sugar, Or coconut sugar
1 tablespoon lemon, fresh, Meyer lemon, or Yuzu juice (or more to taste) work as well
2 tablespoons rice wine vinegar, Mirin

Steps:

  • Drain the tofu then slice it crosswise into 6 pieces. Heat a cast iron or non-stick skillet. Add the tofu, sprinkle with salt and pepper, and cook over medium-high heat until golden. At first it will twitch around as the water in the tofu turns to steam, but then it will settle down. (Note: Tofu has fat in it so it will brown without adding more oil.) Once the first side is browned, turn and cook the second side, around 10 minutes in all. Shake over a tablespoon or two of your sauce of choice (soy, tamari, Worcestershire), season with salt and pepper to taste, and immediately turn off the heat. You can move to Step 2 while the tofu cooks.
  • While the tofu is cooking, using a small saucepan, mix the miso with the sugar and lemon juice. Cook over low heat and cook while stirring until the sugar is dissolved and the mixture is bubbly, about a minute. Let it cook, then stir in the lemon zest and vinegar. Taste to make sure the mixture has enough lemon (if using Meyer lemon, you might want to add a little more juice).
  • Place the tofu on a plate. Spoon the sauce over the finished tofu and garnish with the scallions and sesame seeds.

0.5 (1 1/4 ounce) package chipotle-flavored marinade (Use McCormick's Grill Mates)
1 lime, juice of, to be divided
4 dashes hot sauce (I used Franks, use what you like. adjust to your liking)
1/4 cup olive oil
1 -2 tablespoon water
1 teaspoon garlic powder

  • Slice tofu into 4-5 slices. Wrap the tofu in paper towl and press for 20-30 minutes under some heavy cans on a cookie sheet.
  • When tofu is done pressing, mix 1/2 the packet of marinade mix, garlic powder, hot sauce, oil, water, and 1/2 the lime juice in a small bowl. Add more water if it seems too thick. The garlic and hot sauce can be adjusted to your liking.
  • Place tofu in shallow pan or plate and cover with the marinade, turning to coat. Let marinade for 10 minutes.
  • Grill on a grill pan or outdoor grill on medium-high heat until searing marks are on both sides, and outside becomes crispy. About 10 minutes.
