This is my kind of favorite pizza. I have not try this one but this is almost the same as the one I did without any recipe. This is from the issue of November 2005, Coup de Pouce. ETA : I made it on July 24, 2011. I used 1 lb of lean ground beef. And also a store-bought dough already made. I made this pizza sauce : recipe#460241 I added chopped red bell pepper. DH said 10 stars and he didn't know it was my recipe.

1/2 lb lean ground beef
1 small onion, chopped
3 garlic cloves, minced
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon fresh black pepper
1 lb pizza dough (for 1 pizza)
1/4 cup pizza sauce
3/4 cup cheddar cheese, grated
3/4 cup mozzarella cheese, grated

Steps:

  • In a skillet, cook ground beef, onion, garlic, oregano, salt and pepper at medium-high heat, stirring from time to time, 3 to 5 minutes or until beef is no longer pink. Drain any fat. Set aside.
  • On a lightly floured surface, lower the dough in a circle of 12 inches of diameter. Put on a greased pizza plate. Spread sauce on the pizza dough. Garnish with beef preparation and sprinkle with cheddar and mozzarella cheeses. Cook on the lowest grill in a preheated oven of 500 F for about 10 minutes or until cheese is bubbling and crust is golden and slighly inflated.

4 cups unpeeled shredded zucchini
1/2 teaspoon salt
2 eggs
1/2 cup grated parmesan cheese
1 cup shredded cheddar cheese, divided (or to taste)
2 cups mozzarella cheese, divided (or to taste)
1 lb ground beef
1 -2 tablespoon minced fresh garlic
salt and pepper
1 onion, chopped
1 (15 ounce) can Italian-style tomato sauce (tomato sauce, with 1/4 tsp. each, oregano and basil)
1 medium green pepper, seeded and chopped

Steps:

  • Set oven to 400°F.
  • Grease a 13x9 pan.
  • Place zucchini in strainer; sprinkle with salt.
  • Let drain for 10 minutes.
  • Squeeze out moisture.
  • Combine zucchini with eggs, parmesan cheese, and half of the cheddar and mozzarella cheese.
  • Press into greased 13x9 baking pan.
  • Bake at 400°F for 20 minutes.
  • Meanwhile, brown ground beef with garlic and onions, season with salt and pepper; drain any fat, and add/mix the tomato sauce; spoon over baked zucchini mixture.
  • Top with remaining cheeses, and sprinkle with green pepper.
  • Return to oven and bake for another 20 minutes more.

1 cup chopped fresh mushrooms
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon cornstarch
1-1/2 teaspoons fennel seed
1-1/2 teaspoons dried oregano
1/4 teaspoon garlic powder
2 cans (15 ounces each) pizza sauce
2-1/2 cups shredded cheddar cheese
1 cup shredded part-skim mozzarella cheese
2 tablespoons chopped ripe olives
Breadsticks, bagel chips, baked pita chips and/or tortilla chips

Steps:

  • In a large skillet, cook the beef, mushrooms and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the cornstarch, fennel, oregano and garlic powder until blended. Stir in pizza sauce. , Bring to a boil; cook and stir for 1-2 minutes or until thickened. This is a favorite of my teenaged son and his friends. They've been known to take seconds and even third helpings of this. Even the pickiest of eaters like this casserole--one of my son's friends who is extremely picky asked for the recipe!

1 lb lean ground beef
1 large onion, chopped
1 Tbsp fresh minced garlic
seasoning salt and pepper
4 Tbsp grated parmesan cheese
1 lb pepperoni slices, divided
4 oz can, mushrooms, drained
4 c pasta sauce
4 c rigatoni pasta, cooked and drained
4 c mozzarella cheese, divided

Steps:

  • 1. Spray deep 10x15 pan with non-stick spray. I use my lasagna pan. Cook the ground beef with onion and garlic and seasoned salt and pepper until meat is browned and onion is tender. Drain grease and mix in the Parmesan cheese.
  • 2. Chop half of the pepperoni into small pieces and add to beef mixture. Leave the remaining pepperoni in slices. Stir in drained mushrooms and pasta sauce and simmer for 20-25 minutes on top of stove.
  • 3. Preheat oven to 350. Place cooked rigatoni pasta in the bottom of greased baking dish. Sprinkle 2 cups mozzarella cheese over pasta. Layer the pepperoni slices evenly over the cheese. Top with all of the pasta sauce. Bake uncovered for 30 minutes.
  • 4. Remove from oven and sprinkle remaining 2 cups of mozzarella cheese on top. Return to oven for 10 minutes until cheese is melted. Remove from oven and let stand 15 minutes before serving.
