Tart
1/2 cup whole-milk ricotta cheese
1 large egg yolk
2 teaspoons plus 2 tablespoons extra-virgin olive oil
1/4 cup crème fraîche or sour cream
1 1/2 pounds assorted fresh wild mushrooms (such as chanterelle, oyster, or stemmed shiitake), sliced
2 teaspoons fresh thyme leaves
1 tablespoon butter
1 bunch green onions, thinly sliced on diagonal (about 1 1/2 cups)
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
1 large egg yolk, beaten to blend with 1 teaspoon water (for glaze)
4 ounces thinly sliced Gruyère cheese
Salad
6 tablespoons fresh Italian parsley leaves
1/3 cup 1/2-inch pieces fresh chives
3 tablespoons fresh tarragon leaves
3 tablespoons fresh chervil leaves
2 tablespoons extra-virgin olive oil
2 teaspoons fresh lemon juice

Steps:

  • Puree ricotta in processor until smooth, about 1 minute. Add 1 yolk and 2 teaspoons oil and blend. Transfer ricotta mixture to bowl; fold in crème fraîche.
  • Heat remaining 2 tablespoons oil in heavy large skillet over medium-high heat. Add mushrooms and sauté 7 minutes. Mix in thyme. Season to taste with salt and pepper. Add butter and sauté until mushrooms are tender, about 4 minutes longer. Mix in green onions.
  • Preheat oven to 400°F. Roll out puff pastry on lightly floured surface to 13x9-inch rectangle. Using sharp knife and starting 1/4 inch in from edge, cut score line around entire perimeter of dough, cutting halfway through. Brush 1/4-inch dough border with glaze. Transfer dough to ungreased heavy baking sheet. Spread ricotta mixture over dough, inside border. Top with half of mushrooms, half of Gruyère, then remaining mushrooms and Gruyère. Bake tart until crust is golden and Gruyère melts, about 25 minutes.
  • Meanwhile, prepare salad:
  • Toss herbs with oil and lemon juice in small bowl. Season with salt and pepper.
  • Cut tart into rectangles. Transfer to plates. Garnish with herb salad.

EASY TART WITH CARAMELIZED ONIONS, MUSHROOMS AND GRUYèRE

Easy Tart with Caramelized Onions, Mushrooms and Gruyère image

A savory tart topped with sweet caramelized onions and mushrooms and cut into appetizer-size pieces.

Provided by Marilena Leavitt

Categories     Appetizer

Yield 20 pieces

Number Of Ingredients 14

1 TBSP. olive oil
1 TBSP. butter
2 med. yellow and/or red onions, thinly sliced
½ TBSP. brown sugar
2 TBSPS. Balsamic vinegar
--- --- sea salt & freshly ground pepper
8 oz. Cremini mushrooms, cleaned and thinly sliced
1 TBSP. fresh thyme
2 sm. Yukon Gold potatoes, thinly sliced
1 tsp. fennel seeds, toasted and crushed (optional)
--- --- sea salt & freshly ground pepper
1 sheet frozen puff pastry (½ of a 17oz. package)
(defrosted & thawed according to directions on package)
4 oz. Gruyère cheese, grated

Steps:

  • Heat a large saucepan over medium-high heat. When the pan is hot, add the olive oil and the butter together, followed by the sliced onions. Cook for about 10 minutes or until the onions wilt and start to brown. At that point add the next three ingredients (sugar, vinegar, salt and pepper). Reduce the heat and cook gently, uncovered for about 20 more minutes or until the onions are completely caramelized. Add a little water if the onions look like they are drying out. Taste and adjust the seasoning. Remove the onions to a separate bowl.
  • Add the sliced mushrooms to the same pot and sauté (without oil) for a few minutes until they release their moisture. At that point, add a little olive oil and the thyme leaves and cook for a few minutes, stirring frequently. Once the mushrooms start lightly brown, add the sliced potatoes and the fennel seeds. Season everything with some salt and pepper and cook for a few more minutes, until the potatoes soften a little. Set the mixture aside to cool.
  • Unfold the thawed sheet of puff pastry and place it on a work surface. Roll it out into a 10"x14" rectangle and remove it to a baking sheet lined with parchment paper. Prick with a fork every few inches to prevent the pastry from bubbling while it bakes. Using a very sharp knife, score the perimeter of the dough about ¼- to ½-inch from the edge.
  • Spread the cooled onions evenly over the puff pastry. Top with the sautéed mushrooms and potatoes and sprinkle with the Gruyère cheese. (Refrigerate if not baking immediately).
  • Preheat the oven to 375°F. Bake the puff pastry on the middle rack for 25-30 minutes or until the cheese is bubbling and crust is nice and golden. Allow the tart to cool for 10 minutes then cut it into 20 little rectangles. Serve warm or at room temperature.

BOOZY CHERRY WALNUT TART

Boozy Cherry Walnut Tart image

Cherries in winter may sound counterintuitive, but like frozen peas and corn, frozen cherries are, well, pretty good. Baked on a bed of easy press-in crust, the boozy cherries sink into the almost-frangipane mixture which soaks up much of the juiciness cherries are known for. The trick to a nice, crunchy bottom tart shell is baking longer than you think, so make sure you give it the full time recommended.

Time 1h30m

Yield 8 to 10 servings

Number Of Ingredients 13

1 2/3 cups/215 grams all-purpose flour
2 tablespoons granulated sugar
1 1/2 teaspoons kosher salt
3/4 cup/170 grams unsalted butter (1 1/2 sticks), melted
1 cup/90 grams walnut pieces or halves (or use almonds)
2 tablespoons unsalted butter, chilled
1/4 cup plus 1/3 cup/115 grams granulated sugar, plus more for finishing the tart
5 tablespoons/40 grams all-purpose flour
Kosher salt
1 large egg
1 pound/455 grams pitted cherries, thawed if frozen
2 tablespoons bourbon
2 tablespoons finely grated orange zest

Steps:

  • Make the crust: Mix flour, sugar and salt in a medium bowl. Pour butter over the dry ingredients and, using your hands, mix together until you've got a Play-Doh-like texture.
  • Press crust into a 9-inch tart pan with a removable bottom. (Alternatively, use a 9-inch cake pan lined with parchment; the crust can go about 3/4 inch up the sides of the pan.) Set aside.
  • Make the filling: Heat oven to 350 degrees. Toast walnuts on a rimmed baking sheet until well browned and fragrant, 5 to 8 minutes; remove from heat and let cool.
  • Pulse walnuts, butter, 1/4 cup/50 grams sugar, 2 tablespoons flour and a pinch of kosher salt in a food processor until finely ground. Add the egg and pulse just to blend. Spread walnut mixture on the bottom of the prepared crust.
  • Toss cherries with bourbon, orange zest, remaining 1/3 cup/65 grams sugar, remaining 3 tablespoons flour and a pinch of salt. Scatter cherries over the walnut mixture and sprinkle with a bit more sugar to finish.
  • Place tart on a rimmed baking sheet lined with foil and bake until the crust is golden brown at the edges and the cherries are thick and saucy, 55 to 65 minutes. Let cool at least 30 minutes before removing from the pan and slicing. (If you can wait an hour to let the juices fully settle, even better.)

Provided by threeovens

Categories     Yeast Breads

Time 4h15m

Yield 2 loaves, 16-20 serving(s)

Number Of Ingredients 10

6 1/2 cups bread flour (spoon into a dry measuring cup and level off)
1 tablespoon sugar
1 tablespoon salt
2 teaspoons fresh coarse ground black pepper (optional) or 2 teaspoons crushed red pepper flakes (optional)
1/4 cup butter, cut into 8 pieces (1/2 stick, plus optional extra melted butter for brushing on the finished bread)
1 1/2 cups milk, scalded
1 cup warm water, about 110 degrees
2 1/2 teaspoons active dry yeast (1 1/4 ounce envelope)
2 cups gruyere cheese, coarsely grated and lightly packed
2 cups walnuts, chopped and lightly toasted

Steps:

  • Butter or grease two loaf pans.
  • In a large bowl, combine flour, sugar, salt, and pepper (if using); set aside.
  • Stir the butter into the scalded milk; let cool to room temperature.
  • Once the milk has cooled you can begin to make the dough by pouring the water into the bowl of your stand mixer.
  • Whisk in yeast, wait a minute, then whisk again to be sure all the yeast is completely dissolved; whisk in the cooled milk and butter mixture.
  • Stir in half the flour with a large rubber spatula, then stir in the remaining flour, in smaller batches, to ensure all the flour is moistened.
  • Place the bowl on the stand mixer, fitted with the dough hook, and beat on medium speed until the dough gets smoother, but not competely smooth, about 2 minutes; let rest 10 minutes.
  • Add the cheese and nuts then beat, on medium speed, until the dough becomes smoother and more elastic, about 2 minutes.
  • Transfer the dough to a lightly oil bowl to rise, turning to coat all sides with oil; drape oiled plastic wrap on top and let rise until doubled, about 1 hour.
  • Turn dough out on a lightly floured work area, turn over, press to deflate, then set aside (in oiled bowl) to rise again, about 1 hour.
  • Turn dough out onto floured board and divide in half, taking care not to delate dough too much; shape each half into an 8 to 9 inch square.
  • Roll dough tightly, jelly roll fashion, pinching the edge in when you get to the end; place loaf in pan, seam side down, pressing it into place so that the surface is fairly even.
  • Cover with oiled plastic wrap and let rise another hour; once risen, the dough should protrude about 1 inch over the rim of the loaf pan.
  • Set oven rack to the middle and heat the oven to 400 degrees F.
  • Uncover loaves, and place in the center of the oven rack, short side toward each other, equal distance from each other and the sides of the oven.
  • Bake until the bread is risen, and is deep golden and firm; the internal temperature should be more than 200 degrees F, about 45 minutes.
  • Unmold each loaf and cool, on its side, on a rack (this prevents falling).
  • You can brush the breads with melted butter if you like your crusts soft.
  • Let cool completely before slicing with a sharp serrated knife.
  • Store at room temperature, in a plastic bag, or freeze for longer storage.

ONION GRUYERE TART

Onion Gruyere Tart image

Provided by Marian Burros

Categories     dinner, appetizer, main course

Time 1h40m

Yield 10 servings

Number Of Ingredients 11

2 pounds yellow onions, peeled
4 tablespoons butter
1 teaspoon vegetable oil
Pinch sugar
1/2 cup gewurztraminer
Salt to taste
Dash nutmeg
1/2 cup heavy cream
1 egg
3/4 pound Gruyere cheese
1 11-inch tart crust, chilled (see recipe)

Steps:

  • Cut onions into slices about 1/4 inch thick. Chop coarsely.
  • Heat butter and oil in heavy skillet. Add onions and cook, covered, over medium heat about 10 minutes, or until onions are limp and begin to render liquid. Add pinch of sugar.
  • Uncover onions and cook over medium-high heat 30 to 45 minutes. Stir frequently with a wooden spoon or spatula to scrape up brownings in pan. The onions should be a deep brown and reduced to a small mass. They must be watched carefully and stirred to prevent scorching and to ensure even browning.
  • Transfer onions to a bowl. Add wine to skillet and boil, scraping up pan brownings, until liquid is reduced to a thick glaze. Add glaze to onions, along with salt, nutmeg, cream and egg. Adjust seasoning. (Dish may be prepared to this point a day in advance and refrigerated.)
  • Preheat oven to 375 degrees.
  • Grate cheese and distribute half of it on bottom of chilled pastry shell in pastry tin. Distribute onion mixture evenly over cheese; top with remaining cheese.
  • Bake 40 to 45 minutes. If top browns too much, reduce heat slightly toward the end. Serve as a first course, warm or at room temperature. Tart can be made a few hours ahead, but do not refrigerate.

MUSHROOM-GRUYERE TART

Mushroom-Gruyere Tart image

The whole-wheat and olive oil crust for this savory tart is based on a recipe for crackers. The real surprise here is the addition of tahini in the crust; it makes the whole tart taste more complex. This recipe appears in our cookbook, "A New Way to Bake" (Clarkson Potter).

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Yield Makes one 9 1/2-inch tart

Number Of Ingredients 15

3/4 cup whole-wheat flour
3/4 cup unbleached all-purpose flour, plus more for dusting
1 teaspoon kosher salt
1/4 cup tahini
3 tablespoons extra-virgin olive oil
3 to 4 tablespoons ice water
2 tablespoon extra-virgin olive oil
1/2 cup finely chopped shallot
1 garlic clove, minced
1/4 teaspoon red-pepper flakes, plus more for serving
1 pound wild mushrooms, stems trimmed and caps sliced
1/2 teaspoon kosher salt
3/4 cup coarsely grated Gruyere
2 large eggs, lightly beaten
1/4 cup finely chopped fresh flat-leaf parsley leaves, plus more for serving

Steps:

  • Crust: Preheat oven to 425 degrees. In a large bowl, whisk together both flours and salt. Stir in tahini, oil, and 3 tablespoons water. Roll dough into a 12-inch round and fit it into a 9 1/2-inch tart pan with a removable bottom. Trim flush with rim. Prick bottom of dough all over with a fork. Bake, rotating pan halfway through, until crust is golden brown and crisp, about 35 minutes. Let cool on a wire rack.
  • Filling: Reduce oven temperature to 350 degrees. In a large skillet, heat oil over medium. Add shallot, garlic, and red-pepper flakes; cook, stirring, until shallot is softened, about 4 minutes. Add mushrooms and salt. Cook until mushrooms are tender and golden brown in spots, 6 to 8 minutes. Let cool slightly.
  • In a large bowl, combine cheese, eggs, parsley, and mushroom mixture. Pour filling into crust. Bake tart, rotating pan halfway through, until just set, 30 to 35 minutes. Transfer pan to a wire rack and let tart cool slightly, about 10 minutes. Top with parsley, and serve warm or at room temperature with more red-pepper flakes. (Tart can be refrigerated, covered, overnight; bring to room temperature or reheat before serving.)

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready. This will help you stay organized and avoid any scrambling.
  • Use High-Quality Ingredients: The quality of your ingredients will greatly impact the final dish. Whenever possible, use fresh, organic ingredients.
  • Don't Overwork the Dough: When making the dough, be careful not to overwork it. Overworking the dough will make it tough.
  • Blind Bake the Crust: Blind baking the crust before adding the filling will help to prevent it from becoming soggy.
  • Use a Variety of Cheeses: Feel free to experiment with different types of cheeses in the filling. A combination of Gruyère, cheddar, and Parmesan is a classic choice.
  • Add Some Vegetables: For a more colorful and flavorful tart, add some vegetables to the filling. Some good options include spinach, broccoli, and mushrooms.
  • Don't Overcook the Tart: The tart is done baking when the center is just set. Overcooking will make the filling dry and crumbly.

Conclusion:

This gruyere, scallion, and walnut tart is a delicious and easy-to-make dish that is perfect for any occasion. The combination of Gruyère cheese, scallions, and walnuts creates a rich and flavorful filling, while the flaky crust provides the perfect base. Whether you are serving it for breakfast, lunch, or dinner, this tart is sure to be a hit.
