3 tablespoons fat free Greek yogurt
3 tablespoons agave nectar or 3 tablespoons honey
3 tablespoons unsweetened applesauce
1 teaspoon vanilla extract

  • Preheat oven 350 degrees F. Line 2 cookie sheets with parchment paper.

  • Make a well in the center of the dry mixture and pour in the wet mixture. Fold in just until mixed, do not over mix.

  • Remove from oven and let cool for 1 minute and transfer to cooling rack. Makes 20 cookies.

Tips:

  • Use a variety of nuts and seeds: This will give your snack mix a variety of textures and flavors. Some good options include almonds, cashews, peanuts, walnuts, sunflower seeds, and pumpkin seeds.
  • Choose nuts and seeds that are unsalted and unsweetened: This will help you avoid adding unnecessary sodium and sugar to your snack mix.
  • Add some dried fruit: Dried fruit is a great way to add some natural sweetness and fiber to your snack mix. Some good options include raisins, cranberries, blueberries, and apricots.
  • Use a variety of spices: Spices can add a lot of flavor to your snack mix. Some good options include cinnamon, nutmeg, ginger, and chili powder.
  • Mix everything together and store in an airtight container: Once you have combined all of your ingredients, store your snack mix in an airtight container. This will help keep it fresh and prevent the nuts and seeds from going stale.
