This fresh dish is sure to please at your next dinner party! The red pepper flakes add a little kick, and toasted almonds add a delicious crunch. I like to serve this with orzo pasta or rice pilaf. This dish can also be made with fat-free half and half and low-sodium chicken broth for healthier options.

¼ cup red bell pepper, finely chopped
2 cloves garlic, minced
1 tablespoon crushed red pepper flakes
¼ cup dry white wine
1 teaspoon dried dill weed

POACHED HALIBUT IN WARM HERB VINAIGRETTE

Poached Halibut in Warm Herb Vinaigrette image

ATLANTIC VS. PACIFIC SEAFOOD COOKOFF

Provided by Food Network

Number Of Ingredients 19

1 tablespoon Dijon mustard
1 cup Vinaigrette (see recipe above)
1 small shallot, peeled and finely diced
3 cups court bouillon
4 (8-ounce) halibut steaks, skin on
Fine sea salt, to taste
Freshly ground white pepper, to taste
1/2 teaspoon chopped fresh tarragon
1 1/2 teaspoons chopped fresh Italian parsley
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh chervil
2 bunch cleaned leeks, sauteed
2 teaspoons Dijon mustard
1 teaspoon fine sea salt
2 pinches freshly ground white pepper
3 tablespoons red wine vineagar
3 tablespoons sherry vinegar
1/2 cup plus 1 tablespoon olive oil
1/2 cup plus 1 tablespoon corn oil

Steps:

  • Put the mustard in mixing bowl and slowly whisk in 1 cup of the Vinaigrette. Whisk in the shallot. Put in a small saucepan and set aside. Bring the court bouillon to a boil in a 10-inch pot. Season the halibut with salt and pepper on both sides. Add the halibut to the pot and adjust the heat so the liquid just simmers. Poach until a metal skewer inserted into the center of the halibut meets only a little resistance and the skewer, when left in the fish for 5 seconds, feels barely warm when touched to your lip, about 5 to 6 minutes. The halibut should be rare (thinner steaks will be ready sooner). Take the steaks out ot the liquid as soon as they are done (discard the court bouillon). In a small saute pan with 1 tablespoon butter, saute leeks until tender. Meanwhile, add the herbs to the Vinaigrette and warm over low heat. Pull the skin off the halibut and place in the center of 4 plates. Spoon the Vinaigrette over and around the fish. Serve immediately, with steamed asparagus.
  • Whisk together the mustard, salt, pepper, and vinegars. Whisking constantly, very slowly drizzle in the olive oil and then the corn oil. Store, tightly covered, in the refrigerator for up to 1 week.

PAN ROASTED HALIBUT WITH JALAPENO VINAIGRETTE

Pan Roasted Halibut with Jalapeno Vinaigrette image

This is one of those recipes that caught my eye. It was recently published in our local newspaper. I haven't actually prepared it yet. Plan to do so this weekend. It is quick and sounds full of flavor and spice.

Categories     Halibut

Time 25m

Yield 6 serving(s)

Number Of Ingredients 13

2 tablespoons apple cider vinegar
2 tablespoons very finely chopped red onions
kosher salt
1 tablespoon honey
1 tablespoon chopped cilantro
1/2 teaspoon Dijon mustard
1/2 teaspoon very finely chopped garlic
1/2 cup extra virgin olive oil, plus
1 teaspoon extra virgin olive oil
1 medium jalapeno
fresh ground pepper
6 (5 ounce) halibut fillets
avocados, wedges or parsley (to garnish)

Steps:

  • Combine the vinegar and onion with a half teaspoon of salt.
  • Let stand for 10 minutes and then whisk in the honey, cilantro, mustard, garlic and quarter cup of the olive oil.
  • In a small skillet, heat 1 teaspoon of olive oil over high heat until just smoking.
  • Add the jalapeno and cook turning, until charred and blistered on all sides, about 2 minutes; let cool slightly.
  • Slip off the charred skin.
  • Discard the steam and cut the jalapeno in half lengthwise.
  • Scrape out seeds and finely chop the jalapeno.
  • Add the jalapeno to the vinaigrette and season with salt and pepper.
  • In a large nonstick skillet, heat the remaining quarter cup of olive oil over moderately high heat.
  • Season the halibut with salt and pepper.
  • Add season fish to oil and cook turning once until they are opaque throughout.
  • This should take approximately 9 minutes.
  • Transfer the halibut to a platter.
  • Whisk the vinaigrette, spoon over the fish and garnish with avocado wedges or fresh parsley.
  • PLEASE NOTE: TAKE CAUTION WHEN HANDLING THE JALAPENO.
  • USE RUBBER GLOVES WHEN HANDLING.
  • WASH HANDS THROUGHLY AFTER PREPARING AND DO NOT RUB EYES.

Tips:

  • Choose fresh, high-quality halibut. Look for fish that is firm to the touch and has a mild, sweet smell.
  • Cook the halibut until it is just opaque in the center. Overcooking will make the fish dry and tough.
  • Use a light hand with the vinaigrette. You want to enhance the flavor of the fish, not overwhelm it.
  • Make sure the wasabi cream is smooth and creamy. If it is too thick, it will be difficult to spread on the fish.
  • Serve the halibut with a variety of sides. Roasted vegetables, rice, or quinoa are all good options.

Conclusion:

Halibut with Sambal Vinaigrette and Wasabi Cream is a delicious and elegant dish that is perfect for a special occasion. The fish is cooked to perfection and the flavors of the vinaigrette and wasabi cream complement each other perfectly. This dish is sure to impress your guests.
