Black Bean Soup with Cumin and Cilantro image

Categories     Soup/Stew     Bean     Onion     Pepper     Vegetable     Spice     Winter     Jalapeño     Bon Appétit

Yield 8 servings

Number Of Ingredients 10

2 tablespoons olive oil
1 1/2 cups chopped onion
8 garlic cloves, chopped
1/4 cup chopped jalapeños with seeds
2 cups dried black beans (about 13 ounces)
1 tablespoon ground cumin
2 teaspoons ground coriander
8 cups (or more) vegetable stock or canned vegetable broth
1 cup coarsely chopped fresh cilantro
Lime wedges

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion, garlic and jalapeños; sauté 5 minutes. Mix in beans and spices. Add 8 cups stock and bring to boil. Reduce heat, cover and simmer until beans are tender, stirring occasionally, about 2 hours 15 minutes. Working in batches, puree soup with cilantro in blender. Return soup to pot. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cool slightly. Refrigerate uncovered until cold, then cover and refrigerate.)
  • Bring soup to simmer, thinning with more stock if necessary. Ladle into bowls. Serve, passing lime wedges separately.

Tips:

  • Soak the black beans overnight or for at least 8 hours before cooking. This will help to reduce the cooking time and make the beans more digestible.
  • If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute and then letting them sit for 1 hour.
  • To make the ham and black bean toss more flavorful, use a smoky ham or a ham with a bone-in. The bone will add extra flavor to the dish.
  • If you don't have any fresh cilantro, you can use dried cilantro. However, fresh cilantro will give the dish a more vibrant flavor.
  • Serve the ham and black bean toss with your favorite sides, such as rice, beans, or salad.

Conclusion:

Ham and black bean toss is a quick and easy dish that is perfect for busy weeknights. It is also a great way to use up leftover ham. The combination of ham, black beans, corn, and cilantro is delicious and flavorful. This dish is sure to be a hit with your family and friends.
