2 1/2 pounds ground chuck
3 cloves garlic, minced
2 stalks celery, diced
1 large onion, diced
3 cups beef stock or broth, plus more if needed
One 14.5-ounce can whole tomatoes
3 tablespoons tomato paste
2 teaspoons dried parsley flakes
1/2 teaspoon ground oregano
1/2 teaspoon kosher salt, or more to taste
1/2 teaspoon freshly ground black pepper, or more to taste
1/4 teaspoon cayenne pepper, or more to taste
5 red potatoes, cut into chunks
4 carrots, peeled and sliced on the diagonal
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
Crusty bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the meat with the garlic, celery and onions. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools.)
  • Return the pot to the heat and add the beef stock, tomatoes, tomato paste, parsley, oregano, salt, black pepper, cayenne, potatoes, carrots and green, red and yellow bell peppers. Stir to combine, then bring to a boil. Reduce the heat, cover the pot and simmer until the potatoes are tender but not overly mushy, 15 to 20 more minutes. The soup should be somewhat thick, but if you'd like it to be more "soupy," add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust the seasonings, adding more salt, black pepper or cayenne if needed.
  • Serve with crusty bread!

1 tablespoon olive oil
1 medium onion (minced)
4 cloves garlic (minced)
2 carrots (diced)
2 stalks celery (diced)
1 ½ lb lean ground beef (see notes)
4 tablespoons tomato paste
6 cups beef broth
14 ounce can diced tomatoes
1 tablespoon Italian seasoning
2 russet potatoes (about 1 ¼ lb, diced)
Optional: 1 cup frozen peas and 1 cup frozen corn
Salt and pepper (to taste)

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook for about 5 minutes, until the onion is golden. Add the carrots and celery and cook for 3 minutes more.
  • Add the ground beef and cook for about 8 minutes, until it is crumbly and no longer pink.
  • Push the beef to the side of the pot and add the tomato paste. Let it cook for 2-3 minutes, until it is sweet-smelling.

This has been in my family for ages - my grandmother used to make this during the depression. Don't let the simple ingredients turn you off--this is definitely more than it seems it should be. It seems that I crave this when I'm not quite feeling up to par. I love this with a nice slice or two of warm bread.

2 -3 quarts water
1 -2 lb ground beef (You do NOT want the leanest beef for this)
2 -3 potatoes
1 -1 1/2 large carrot
1/2 onion
salt or pepper

Steps:

  • Dice the onion, carrot and potatoes and place in the pot of water.
  • Add a little salt and pepper.
  • Bring to a boil, then reduce heat and simmer until the potatoes and carrot are tender.
  • Bring to a slow boil again, and sprinkle the uncooked beef into the soup.
  • Let cook for a few minutes to be sure the beef is done.
  • Salt and pepper to taste.

  • I find that the more I make this, the more veggies I add. I now add celery with the carrot, onion and potato, and after it's done (beef is cooked), I'll add corn or peas, or leftover spinach/kale/greens whatever, even leftover rice or barley pilaf~~~Since being laid off 2 years ago, there's not an awful lot that I waste! Since I love casseroles I tried to modify my usual hamburger/potatoe casserole and I think I made it a little better this time with the additon of the rotel tomatoes and an addition of the vegetable soup. Since this juices up well you may need a thickener at the end. I added extra cheese and let it sit for about 15 minutes last time and that worked well. Hope you enjoy.

1 can Rotel Tomatoes

1 cup shredded mozzarella cheese

Steps:
