Steps:

  • In a large skillet sprayed with cooking spray, brown the chicken strips in batches and then transfer into a bowl.
  • Spray skillet again, and add green onions, apples, nutmeg, salt, and pepper; cook, stirring for about 3 minutes to soften.
  • Add vinegar, scraping any bits stuck to pan.
  • Stir in evaporated milk and cranberries, bringing to a boil.
  • Reduce heat and boil gently, stirring often, for about 3 minutes or until slightly thickened.
  • Meanwhile, in a large pot of boiling salted water, cook whole wheat pasta for about 10 minutes or until at your desired tenderness. Drain and return to the pot.
  • Add chicken and any accumulated juices to the sauce; simmer for about three minutes or until chicken is no longer pink inside.
  • Pour over pasta and toss to coat. Season with additional salt and pepper.
  • Serve sprinkled with chives and with cheddar cheese in side dish to top with, along with a side salad and bread. Dont let it sit to long in pot before serving -- the pasta will absorb the sauce.

  • In a bowl grate zucchini/courgette and carrot. Cut the apple into small chunks.

1 Granny Smith or Ida Red apple, peel on
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 175 degrees. In a medium saucepan over medium heat, bring sugar and 1 cup water to a simmer, stirring occasionally. Meanwhile, slice apple lengthwise into 1/16-inch thick slices using a mandoline, continuing to the core. Turn, and slice the other side of apple; discard core.
  • When sugar has completely dissolved, place 5 or 6 slices of apple into the sugar syrup and simmer for 20 seconds. Using a slotted spoon, transfer slices to a wire rack to drain. Repeat process with remaining apple slices.
  • Lightly brush 2 baking sheets with vegetable oil and arrange apple slices in a single layer. Bake until apples are crisp, 2 to 2 1/2 hours. The apple chips will keep in an airtight container at room temperature for up to 2 days.

8 large apples, peeled and rough chopped (I used McIntosh, you can use whatever, you just don't want a tart apple)
2 cups celery, rough chopped
4 cups chicken broth
4 tablespoons butter
1 medium onion, rough chopped
1 tablespoon fresh sage, very fine chopped
1 pinch clove
ground black pepper
1 1/2 cups mascarpone
2 ounces brandy

Steps:

  • Base -- In a medium sauce pan, melt the butter over medium heat and add the celery, onion and cook 3-4 minutes. Add in the apples and broth and cook until tender. It will take about 20 minutes on a medium low simmer, uncovered.
  • Puree -- I used my immersion blender, but you can you can transfer it to a standard blender and puree until smooth.
  • Season -- Add in the the sage, and a very small pinch of cloves, go easy ad season with black pepper. Cook another 10 minutes.
  • Mascarpone -- Mix the mascarpone with the brandy, and return to the refrigerator. I mixed mine right in the container, save on those dirty dishes.
  • Serve -- I like to serve with a fresh small sprig of sage and a dollop of the Brandied Mascarpone cheese. You can serve this hot, which I prefer, or chilled is also very good. And don't forget my Sweet Savory Bread Sticks.

Steps:

  • Toss apple with Splenda set aside.
  • Whisk egg, applesauce, & vanilla.
  • Add the remaining ingredients. Mix well.
  • Add apple mixture. Mix well.
  • Pour into 12 greased muffin tins.
  • Batke at 325 for 25-30 minutes.

I've adapted this from a Rosemary Stanton recipe putting my own little twist on things. This loaf is a bit healthier than many regular loaf and cake recipes. It's free of lactose, butter and eggs and is a great snack when you're on the move or looking for a healthier alternative to satisfy those indulgent cravings!

Number Of Ingredients 8

1 cup chopped dates
1/4 cup honey
1 teaspoon bicarbonate of soda
1 cup apple juice
2 grated granny smith apples, grated, excess liquid squeezed out and reserved (any other cooking apple will suffice)
1/2 cup chopped walnuts
1 1/2 cups whole wheat flour
2 teaspoons baking powder

Steps:

  • In a small saucepan heat the dates, honey, bicarbonate soda, apple juice and the reserved apple juice. Bring to the boil whilst stirring then allow to simmer for 2-3 minutes. Remove from heat and allow to cool slightly.
  • In a large mixing bowl mix togther the apple, walnuts, flour and baking powder. Make a little well in the centre and pour in the contents of the saucepan. Mix well until all combined.
  • Pour the mixture into a lined 14 x 21 loaf tin and bake in a moderate oven for 40 minutes, or until the centre is cooked. Allow to cool before cutting into slices.
