RIDICULOUSLY HEALTHY BANANA OATMEAL COOKIES

Ridiculously Healthy Banana Oatmeal Cookies image

In a bid to add to my seemingly-naughty-but-actually-very-healthy recipe collection, I invented these ridiculously healthy banana oatmeal cookies! They have no added sugar, no butter/marg and no flour in them and (considering this) taste rather magnificent if I do say so myself! I'll say it now - if you're NOT on a diet then you probably won't think so much of these. They are pretty yummy, but there are probably plenty of nicer recipes (ie. with butter and sugar) if you're not weight watching. I find these to be a really nice, healthy, filling treat though, and I hope you enjoy them too!

Time 30m

Yield 9 cookies

Number Of Ingredients 7

3 ripe bananas
2 cups oats (not instant, the proper scotts type)
1/2 cup skim milk
1 egg
2 tablespoons Splenda sugar substitute
1/2 teaspoon vanilla extract
1 tablespoon low-fat peanut butter (optional)

Steps:

  • Preheat the oven to 180c.
  • Mash the bananas and mix with the oats, milk and egg before adding the remaining ingredients (it just mixes a bit easier and more evenly this way). These measurements make the mixture just the right consistency for my liking, but if it looks a bit runny to you at this point, throw in another handful of oats to thicken it up.
  • Grease a cookie tray with 1 cal spray and spoon the mixture on to make around 9 large cookies.
  • Bake for around 20mins until golden brown.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your cookies will be. You can also use overripe bananas for this recipe, just make sure to mash them well.
  • Mash the bananas well: Make sure to mash the bananas until they are completely smooth. This will help the cookies to have a uniform texture.
  • Use old-fashioned oats: Old-fashioned oats will give your cookies a chewy texture. If you only have quick-cooking oats, you can use those, but your cookies will be a bit less chewy.
  • Chill the dough: Chilling the dough for at least 30 minutes will help the cookies to hold their shape better when baking.
  • Bake the cookies at the right temperature: The cookies should be baked at 350 degrees Fahrenheit. If you bake them at a higher temperature, they will brown too quickly and may become dry.
  • Let the cookies cool completely: The cookies will be very soft when they first come out of the oven. Let them cool completely on a wire rack before enjoying.

Conclusion:

These peanut butter banana oatmeal cookies are a delicious and healthy snack or breakfast option. They are made with simple ingredients and are easy to make. The cookies are also a good source of fiber and protein. If you are looking for a healthy and satisfying cookie recipe, these peanut butter banana oatmeal cookies are a great choice.
