2 tablespoons sugar
1 1/3 cups sugar
1/2 teaspoon ground cinnamon
5 tablespoons canola oil
3 tablespoons unsweetened applesauce
1/2 cup egg substitute
1 cup sour milk (see note)
1 teaspoon baking soda
2 cups flour
1 tablespoon flour
3 cups rhubarb, diced
3 tablespoons finely chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Coat a 13 X 9 inch pan (glass is best) with non-stick cooking spray.
  • In a small bowl, combine 2 TBSP sugar and 1/2 tsp cinnamon.
  • Set aside.
  • In a large bowl, combine remaining 1 1/3 cup sugar, oil, applesauce, egg substitute, and sour milk.
  • In separate bowl, combine baking soda and flour.
  • Stir flour mixture into wet ingredients.

1 1/2 cups egg whites (12)
1 1/2 teaspoons cream of tartar
1 cup granulated sugar
1 1/2 teaspoons vanilla

Steps:

  • Move oven rack to lowest position. Heat oven to 375°F.
  • Mix powdered sugar and flour; set aside. Beat egg whites and cream of tartar in large bowl with electric mixer on medium speed until foamy.
