BEST HOMEMADE SEITAN

Best Homemade Seitan image

This seitan is eaten by vegans as a meat substitute. The flavoring for this goes well with pretty much any dish, but depending what you are using it for you can change the flavors up a bit by adding finely-chopped herbs to the mixture, or if you're making something Asian or Indian, some grated ginger wouldn't hurt.

Time 2h15m

Yield 6

Number Of Ingredients 11

1 ½ cups vital wheat gluten flour
¼ cup nutritional yeast
1 cup ice cold vegetable stock
½ cup soy sauce
1 tablespoon tomato paste
2 cloves garlic, minced
1 teaspoon grated lemon zest
1 teaspoon salt-free seasoning blend
½ cup soy sauce
10 cups ice cold water
1 teaspoon vegetable oil

Steps:

  • Combine the vital wheat gluten flour and nutritional yeast flakes in a bowl; set aside. In a separate bowl, mix the vegetable stock, 1/2 cup of soy sauce, tomato paste, garlic, lemon zest, and seasoning blend.
  • Pour the wet ingredients into the flour mixture and stir with a firm spatula. Knead the dough until a spongy, elastic dough forms, about 3 minutes. Roll the dough into a log shape and cut it into 3 equal pieces.
  • Combine 1/2 cup of soy sauce and cold water in a large pot. The simmering broth should be very cold when you add the dough to help it keep a firm texture and ensure that it doesn't break apart. Place the dough pieces in the cold broth, partially cover the pot, and bring it to a boil over high heat. Reduce the heat to low, partially cover the pot, and simmer for 1 hour, turning the dough pieces occasionally.
  • Remove the pot from the heat and let the gluten cool in the broth for at least 30 minutes. To store the gluten, refrigerate, covered in the broth, in a sealed container for up to 5 days.
  • If your recipe calls for seitan, cut the gluten into pieces. Add vegetable oil to a heavy skillet and turn the heat to medium-high. Add the gluten pieces and cook for 20 minutes, turning the pieces occasionally.

HERB-ENCRUSTED SEITAN

Herb-Encrusted Seitan image

This seitan is very lightly breaded and fried, so it tastes crispy and delicious without having too much fat. The herbs are key, and really add to the flavor. I used store-bought seitan and broke it into chunks, but you could make your own and cut it however you like. I think it would be excellent with cutlets.

Herb Encrusted Sea Bass with Sundried Tomato Chardonnay Sauce image

Provided by Food Network

Categories     main-dish

Time 50m

Yield 2 servings

Number Of Ingredients 22

2 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh thyme leaves
1 teaspoon black peppercorns, crushed finely
2 cloves garlic, minced
2 tablespoons olive oil
2 (8 ounce fillets) fresh sea bass
1/4 cup Cognac or brandy
1/3 cup fish stock
Salt and pepper
1 bunch asparagus, blanched and refreshed
Sundried Tomato-Chardonnay Sauce, recipe follows
2 basil buds, for garnish
1 tomato, peeled seeded and small diced (1 tomato concassed), for garnish
1/4 cup olive oil
2 tablespoons black peppercorns
2 tablespoons shallots
3 cups Chardonnay
1 fresh bay leaf
1 teaspoon fresh lemon juice
1 large sun-dried tomato, chopped
1/2 pound butter, cut into small cubes
Salt

Steps:

  • In a flat plate, mix the basil, thyme, peppercorns, and garlic.
  • Heat the oil in a large saute pan. Encrust the fish with the fresh spice mix. Saute the fish delicately, about 3 minutes per side.
  • Without removing the fillets from the pan, drain off most of the oil. Deglaze the pan with the Cognac. Tilt pan to flambe, allowing the flame to crisp the crust on the fish. Add the stock to extinguish the flambe, and to deglaze further.
  • Season with salt and pepper.
  • Divide asparagus between two serving plates, arranging the stalks decoratively. Carefully place sauteed fish on top of the asparagus. Drizzle the Sundried Tomato-Chardonnay sauce over and around the fish. Sprinkle the tomato concasse all over the plate. Place a basil bud on top of the fish.
  • Heat olive oil in a saucepan, then add peppercorns and shallots. Saute until translucent. Add the wine, bay leaf, lemon juice, and sun-dried tomato, and reduce by 80 percent. With a whisk, 3 to 4 cubes at a time, incorporate butter, making a beurre blanc sauce. Strain through chinois. Keep warm.

CORNMEAL-CRUSTED SEITAN

Cornmeal-Crusted Seitan image

Categories     Salad     Side     Fry     Cornmeal     Raw     Pastry

Yield 4 servings

Number Of Ingredients 7

1/4 cup yellow cornmeal, preferably stone-ground
1/4 cup whole wheat pastry flour
1 tablespoon nutritional yeast, optional
1 1/2 teaspoons salt-free seasoning (such as Spike or Mrs. Dash)
1/4 teaspoon salt
Two 8-ounce packages seitan stir-fry strips or 1 pound fresh seitan, cut into thin strips
2 tablespoons olive oil, or as needed

Steps:

  • Combine the cornmeal and 3/4 cup boiling water in a large heatproof mixing bowl. Let stand for 1 minute, then stir. Add the flour, optional yeast, seasoning, and salt, and whisk together.
  • Add the seitan to the bowl and stir to coat the seitan pieces evenly.
  • Heat the oil in a wide nonstick skillet. Arrange the seitan in the skillet in a single layer, if possible, or work in batches. Sauté over medium-high heat on all sides until the cornmeal turns golden brown and crusty. Serve at once.
  • Menu Suggestions
  • Like the previous recipe, this works nicely in a Parisian-style assiette. See the suggestions in the box on page 67; as well as the menu suggestions with Seitan and Mushrooms in Paprika Cream (page 68).
  • This goes well with whole-grain dishes; here are a few ideas. With any of these, add some colorful raw vegetables or a simple salad: Quinoa with Wild Mushrooms and Mixed Squashes (page 90); Quinoa with Cauliflower, Cranberries, and Pine Nuts (page 92); Curried Cashew Couscous (page 93); or Lemony Couscous with Broccoli (page 94).
  • Cornmeal-Crusted Seitan is a good partner for Sweet and White Potato Salad with Mixed Greens (page 188) or Warm Mediterranean Potato Salad (page 193). With the latter, add some grape tomatoes to the plate.

Tips:

  • For a crispy crust, make sure to coat the seitan in a generous amount of olive oil and herb mixture.
  • Don't overcrowd the pan when cooking the seitan. Otherwise, it will steam instead of fry and won't get as crispy.
  • If you don't have a meat thermometer, you can check if the seitan is cooked through by cutting into it. It should be golden brown on the inside.
  • Serve the seitan with your favorite dipping sauce, such as marinara sauce, barbecue sauce, or ranch dressing.

Conclusion:

Herb-encrusted seitan is a delicious and versatile vegan dish that can be enjoyed in a variety of ways. It's perfect for a quick and easy weeknight meal or a special occasion dinner. Try experimenting with different herbs and spices to create your own unique flavor combinations. Serve it with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad. Enjoy!
