Yield 4 Logs

Steps:
- Grate and set aside the colby cheese in a large mixing bowl. Add the cream cheese, the Cumin and with gloved hands mix thoroughly. The cheeses soften during mixing but they will harden back up in the refrigerator. Divide the bowls contents into 4 even portions. Roll each portion into a log about the size of a quarter in diameter, and roll the log into the spicy chile powder. Wrap each log in wax paper or plastic wrap and store in the refrigerator for 24 hours if possible before slicing and serving with or without your favorite crackers.
Tips:
- Choose the right cheese: A good cheese log starts with a good cheese. Choose a cheese that is firm enough to hold its shape, but not too hard to spread. Semi-hard cheeses like cheddar, Monterey Jack, and Gouda are all good choices.
- Add flavor: Once you have your cheese, you can start adding flavor. Grated Parmesan, crumbled blue cheese, chopped nuts, and dried fruits are all popular additions. You can also add herbs, spices, and spreads to create a unique flavor profile.
- Shape the log: Once you have your cheese mixture, it's time to shape it into a log. The easiest way to do this is to use a piece of plastic wrap. Spread the cheese mixture out on the plastic wrap, then roll it up tightly. Twist the ends of the plastic wrap to secure the log.
- Chill the log: Once the log is shaped, it needs to be chilled for at least 30 minutes. This will help the cheese to firm up and hold its shape.
- Serve the log: When you're ready to serve the cheese log, simply unwrap it and slice it into rounds. Serve with crackers, bread, or fruit.
