- Heat milk, water, and 1/4 cup butter together in a saucepan over medium heat until bubbling, about 5 minutes. Let cool to 120 to 130 degrees F (49 to 54 degrees C), 1 to 2 minutes.
- Mix flour, white sugar, salt, and yeast together in a separate bowl. Mix egg into warm milk mixture.
- Pour milk mixture and 1/3 of the flour mixture into a mixing bowl; beat using an electric mixer until moistened. Add remaining dry ingredients slowly until a dough has pulled together. - 1/2 stick melted butter for center of rolls and a mixtuer of about 1 cup sugar and some cinnamon for sprinkling in center Melt shortening with sugar and salt in microwave about 3 minutes or until shortening is melted.
- While microwave is running, put yeast in the warm water and stir to dissolve.
- Slowly add flour to shortening mixture but not too much.
- When yeast is dissolved stir completely and add to flour mixture.
- Add eggs and flour alternately and mix as much as you can with mixer, then take rest of flour and knead on counter until no longer tacky.
- Grease bowl with oil and place dough in bowl and add more oil to coat top.
- Place a towel over bowl and let rise until double in bulk.
- In small bowl, mix 1 cup or so of sugar and add cinnamon to taste.
- After dough rises, roll out on counter to about 1/4" thick.
- Melt butter and spread over dough.
- Sprinkle cinnamon sugar over entire rolled out dough.
- Roll up dough into jelly roll style and take knife and cut into about 1" to 1 1/2" slices.
- Put in glass pan that has been sprayed with pam spray.
- Cover with towel and let rise until double.
- Bake at 375 for about 20 minutes or so.
- You can frost the cooled rolls with powder sugar frosting.

- 1. In a large mixer bowl combine 1 1/2 cups of all purpose flour and yeast. Heat the milk, granulated sugar, the 1/4 cup butter and salt just until mixture is warm (120 - 130 degrees) and the butter is almost melted, stirring constantly.
- 2. Add milk mixture to flour mixture; add eggs. Beat with an electric mixer on low speed for 30 seconds; scraping sides of bowl constantly. Beat on high speed for 3 minutes. Using a big, strong spoon stir in as much of the remaining flour as possible. Dough will be soft. Turn dough out on to a lightly floured surface. Knead in enough of the remaining flour to make a moderately soft dough (3 to 5 minutes total). Shape dough into a ball.
- 3. Place ball of dough into a lightly greased bowl; turn once. COVER; let rise in a warm place until doubled in size (this should take about 1 to 1 1/2 hours). The dough is ready for shaping when you can lightly and quickly press 2 fingers 1/2 inch into dough and indention remains.
- 4. Punch dough down. On a lightly floured surface, divide dough in half; shape each half into a smooth ball. Cover and let rest 10 minutes.
- 5. On light floured surface roll half the dough to 12x8 inches. Spread with 3 Tablespoons of butter. Combine brown sugar and cinnamon; sprinkle half over rectangle. Roll up from the short side. Seal edges. Make a second roll with remaining dough, butter and sugar mixture.
- 6. Slice each roll into 8 pieces. It's easier if you begin slicing from the center of the roll, the slices will be more uniform. Arrange slices, cut side down, in a greased 13x9x2 inch baking pan. Cover, let rise until nearly doubled in size, about 30 minutes.
- 7. Bake rolls in a 350 degree pre heated oven for 25 to 30 minutes or until light brown. Drizzle with Maple Nut Glaze.
- 8. MAPLE NUT GLAZE: In a small bowl combine 1 cup sifted powdered sugar, 2 Tablespoons maple syrup. Stir in 1/4 cup coarsely chopped pecans.
- 9. FOR FREEZING AND REHEATING: BAKE AND COOL ROLLS AS DIRECTED, DO NOT GLAZE. WRAP IN MOISTURE AND VAPOR PROOF WRAP. SEAL, LABEL, AND FREEZE UP TO 3 MONTHS. TO REHEAT IN A CONVENTIONAL OVEN, WRAP FROZEN ROLLS IN FOIL. PLACE INTO A 350 DEGREE OVEN FOR 20 TO 25 MINUTES. DRIZZLE WITH GLAZE.

- 1. Activate the yeast by whisking into the warm milk and let set for 5 minutes. While waiting, mix your dry ingredients in a stand mixer.
- 2. Pour the yeast milk mixture into the flour/sugar/salt mix in the bowl. Add the beaten eggs, melted butter and mix with dough hook until it pulls away into a ball. It will be slightly sticky, do NOT add more flour.
- 3. Make into a ball and return to greased bowl, covering with plastic wrap tightly to rise until doubled in size. I put this in the oven with the oven light on and this works nicely!
- 4. After risen, take out and roll until large rectangle. Slather the slightly softened butter onto the rectangles. Mix the cinnamon and sugar and sprinkle over the butter and gently press into the dough/butter. Tightly roll beginning with one long side and pinch together. Depending on the size pan you are using cut the rolls using a serrated knife or using unflavored plain dental floss. When I use a 9x13 pan, I usually make 15. Grease your pan and place the rolls into the pan, covering with the plastic wrap and let rise again until double, about an hour.
- 5. Bake at 350 for 20 to 25 minutes until slightly brown. Make the icing by creaming ingredients together, using only enough milk for desired consistency. Slather over warmed cinnamon rolls and enjoy!
