HONEY BARBECUED CHICKEN OR SHRIMP

Honey Barbecued Chicken or Shrimp image

A delicious grilled recipe that makes the meat very tender. The part that takes the longest is allowing the meat to marinate!

Provided by bellacola

Categories     Chicken

Time 20m

Yield 4 serving(s)

Number Of Ingredients 5

1/4 cup barbecue sauce (I love Sweet Baby Ray's Hot and Spicy)
1/4 cup honey (use the real stuff, if you buy it in bulk, it's pretty cheap) or 1/4 cup maple syrup (use the real stuff, if you buy it in bulk, it's pretty cheap)
2 tablespoons sweet sherry
2 tablespoons soy sauce
1 lb chicken or 1 lb shrimp

Steps:

  • Mix first four ingredients together
  • Place chicken or shrimp in a freezer bag or bowl and add marinade
  • Marinate for at least one hour (I often add the marinade as soon as I take the meat out of the freezer and let it thaw in the marinade)
  • Grill or broil until meat is no longer pink (sorry, I am horrible with cooking times!).

Tips:

  • Choose the right chicken: Use boneless, skinless chicken breasts or thighs for this recipe. Bone-in chicken takes longer to cook, and the skin can make the chicken greasy.
  • Make sure the chicken is fully cooked: To ensure that the chicken is cooked through, use a meat thermometer to check that it has reached an internal temperature of 165°F (74°C).
  • Don't overcook the chicken: Overcooked chicken will be dry and tough. Cook the chicken until it is just cooked through, then remove it from the heat.
  • Use a good quality honey: The honey you use will make a big difference in the flavor of the chicken. Use a honey that is thick and flavorful, such as clover honey or manuka honey.
  • Make the sauce ahead of time: The sauce can be made up to 2 days in advance. This will give the flavors time to meld together.
  • Serve the chicken with your favorite sides: Honey barbecued chicken can be served with a variety of sides, such as mashed potatoes, roasted vegetables, or coleslaw.

Conclusion:

Honey barbecued chicken is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover chicken, and it can also be made ahead of time. Serve it with your favorite sides for a complete meal that everyone will enjoy.
