HONEY CRACKLES
This is our traditional family snack, much beloved even by people who don't normally like cereal. I have taught this one in numerous cooking classes for teenagers, and none have experienced any "failures", so I think it's fairly easy as long as you don't substitute and mix the honey/butter into the cornflakes well.

Tips:
- Use fresh honey for the best flavor.
- If your honey is thick, warm it up gently in a microwave or on the stovetop until it is pourable.
- Do not boil the honey, as this will ruin its flavor and texture.
- Make sure the baking soda is fresh and active. If you are unsure, you can test it by adding a small amount to a cup of vinegar. If it bubbles, it is still active.
- Work quickly when mixing the honey and baking soda together, as the mixture will start to foam and expand.
- If you want your honeycomb crackles to be extra crispy, bake them for a few minutes longer.
- Store the honeycomb crackles in an airtight container at room temperature for up to two weeks.
