Yield Makes 12 small biscuits

Number Of Ingredients 5

1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon coarse salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into small pieces
3/4 cup milk (see headnote)

Steps:

  • Preheat the oven to 450 degrees. Butter or line a baking sheet.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Using a fork or 2 table knives, combine the butter and flour mixture until it resembles a coarse meal. Slowly add the milk, stirring with a fork, to the desired consistency.
  • For softer biscuits, drop 2 tablespoons of the dough onto the lined baking sheet. For firmer biscuits, turn the dough out onto a clean, lightly floured surface and gently knead just to bring the dough together. Carefully roll out the dough about 3/4 inch thick. Using a biscuit cutter or sturdy glass, cut about 12 biscuits, rerolling any scraps. Place on the lined baking sheet. (The biscuits can be frozen at this point. Freeze on the baking sheet, then remove to a resealable container or plastic bag for easier storage.) Bake the biscuits for 13 to 15 minutes (add 3 to 4 additional minutes for frozen ones), until golden brown. Cool slightly and serve warm.

MAPLE BUTTER COOKIES

Maple Butter Cookies image

This is an old Gourmet recipe. The actual recipe used a maple leaf cookie cutter, but as you can see from the photo, I only had hearts. Very nice, mellow, maple-ish flavour. While these taste nice unglazed, the additional punch of maple takes it over the top.

Time 5m

Yield 8 serving(s)

Number Of Ingredients 3

1/2 cup butter, room temperature
2 tablespoons pure maple syrup
1/4 teaspoon hot pepper sauce

Steps:

  • Mix together butter, maple syrup and hot pepper sauce in bowl until well blended.
  • Serve on buttermilk biscuits.

Tips:

  • Use real maple syrup: Artificial maple syrup will not produce the same rich flavor as real maple syrup.
  • Add cayenne pepper to taste: The amount of cayenne pepper you add will depend on your personal preference for spiciness. Start with a small amount and add more to taste.
  • Be careful not to burn the butter: Keep a close eye on the butter while it is melting and simmering. If the butter starts to brown, remove it from the heat immediately.
  • Let the butter cool slightly before using: This will help to prevent the butter from melting too quickly when you spread it on your biscuits.

Conclusion:

This hot and spicy maple butter is a delicious and easy way to add a little extra flavor to your biscuits. It is also a great way to use up any leftover maple syrup you may have. Whether you are serving it for breakfast, lunch, or dinner, this maple butter is sure to be a hit.
