One tip he gave me was to put a little of the marinade in a dish with the onion halves and microwave for a minute or two. It softend them up before putting on the skewers with the rest of the meat and veggies.

1/2 cup lemon juice
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 teaspoon dry mustard
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon coarse black pepper
1/2 cup vinegar
1 teaspoon dried parsley
1 teaspoon sugar
1/8 teaspoon dried basil
1/3 cup oil

Steps:

  • Mix the first 11 ingredients. Whisk in the oil.
  • Marinate meat for several hours.
  • Grill meat in the manner you desire.

While going through some old binders, I found this recipe in a booklet put out by HP. And yes, HP does stand for Houses of Parliament (the picture you see on the bottle). I don't know about its availability in the U.S., but in Canada a bottle of HP sauce is just about as common as ketchup -- all restaurants have it on hand, and it's in most homes.

1/4 cup HP steak sauce
1/4 cup dry wine (red or white, your choice)
2 tablespoons olive oil
1/2 teaspoon Worcestershire sauce
1 clove garlic, minced
4 boneless skinless chicken breasts (or 4 pork chops)

Steps:

  • In a mixing bowl, whisk together HP Sauce, wine, oil, worcestershire sauce and garlic.
  • Place chicken in a dish, pour marinade over, cover with plastic wrap and place in the fridge for at least 4 hours.
  • After marinating is done, drain off marinade and grill or broil chicken until done.
  • If desired, place marinade in a small pot, bring to a boil, let boil for 2 minutes, then use as a basting sauce for chicken (do not use straight from the fridge as there is a danger of bacteria; boil first).

⅔ cup olive oil
⅔ cup reduced-sodium soy sauce
¼ cup lemon juice
2 tablespoons liquid smoke flavoring
2 tablespoons spicy brown mustard
2 teaspoons ground black pepper
2 teaspoons garlic powder
4 skinless, boneless chicken breast halves

Steps:

  • Mix olive oil, soy sauce, lemon juice, liquid smoke, mustard, pepper, and garlic powder together in a large glass or ceramic bowl.
  • Place chicken in the bowl turn to coat with marinade. Cover and marinate in the refrigerator for 1 to 4 hours. Do not marinate longer than 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, 6 to 8 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
