Steps:

  • Preheat the oven to 325 degrees F.
  • With a handheld mixer in a large bowl, cream the butter with the sugars until fluffy, 2 to 3 minutes. Add the egg and vanilla, beating for about 1 minute. Sift the salt with the flour and matcha. Reduce the mixer to a low speed and then add the flour mixture, mixing just until blended.
  • Turn the dough out of the bowl. Shape into a disc, cover with plastic wrap and chill for 1 hour.

Nonstick coconut or olive oil cooking spray
3/4 cup gluten-free flour
1/2 teaspoon aluminum-free baking powder
1/4 teaspoon sea salt
1/3 cup organic sugar
1/4 cup unrefined coconut oil, melted
1 teaspoon organic pure vanilla extract
1 egg (if making vegan, add 1 to 2 tablespoons of water)
1 1/2 ripe medium bananas
1/2 cup gluten-free organic rolled oats
1 cup dark chocolate chips
1 1/2 tablespoon matcha powder, sifted (see Cook's Note)

Steps:

  • Preheat the oven to 325 degrees F. Line two rimmed baking sheets with aluminum foil and coat lightly with cooking spray.

  • Cover the cookie dough with plastic wrap and chill in the refrigerator for 15 minutes.
  • Using a 1-tablespoon cookie scoop, scoop out 1 1/2-inch balls and place them about 1 inch apart on the prepared baking sheet.
