1 large egg, at room temperature, lightly beaten
3/4 cup buttermilk
1/2 teaspoon lemon juice

2 tablespoons vegetable oil
cornbread (4 slabs from recipe above)
unsalted butter, for spreading plus
2 tablespoons butter, for frying
1 cup shredded cheddar cheese
4 large eggs
1 leaf fresh cilantro, from a bunch, chopped
hot sauce
