Yield 4 servings

Number Of Ingredients 21

Lamb:
1 pound ground lamb
1/2 cup yellow or red onion, finely chopped
2-3 cloves garlic, minced
2 teaspoons fresh ginger, finely grated
1 teaspoon garam masala
1 teaspoon curry powder
1 teaspoon paprika
Salt
Pepper
Ramp Raita:
8 ramps, just the greens, minced
2 tablespoons extra-virgin olive oil
2 teaspoons lemon juice
1/2 cup yogurt
Wraps:
4 large flour tortillas or wraps
2 Persian cucumbers, sliced very thin on a mandoline
1/2 red onion, thinly sliced
Fresh cilantro sprigs, about 1/4 bunch
Greens or microgreens

Steps:

  • In a medium bowl, mix the spiced lamb ingredients with 1 teaspoon salt and 1/2 teaspoon pepper. Cover and refrigerate.
  • Next, combine the ramp raita ingredients with a couple of pinches of salt and give it a good stir. Cover and refrigerate that too.
  • Remove the lamb mixture from the fridge and uncover. Shape into elongated patties, about 5 inches long, and flatten slightly; you should have 10 total.
  • Turn broiler to high and place the lamb patties on a small sheet pan. Broil for 10 minutes. Do not turn them halfway through cooking- it will ruin the texture. Remove from the oven and set aside.
  • Heat the tortillas (either in the microwave or using tongs to hold them over an open flame for a few seconds) to make them more pliable.
  • On a piece of wax paper, place a tortilla, spread some raita on it, then top with a few slices of cucumber, onion, 2-3 lamb patties, a couple of sprigs of cilantro, and microgreens. Roll the tortilla pretty tightly using the wax paper. Twist the edges so all the ingredients are snug inside (like a Tootsie Roll). Let it sit 5 minutes before slicing in half.

Indian-Spiced Beefy Lettuce Wraps image

This recipe is one of my go-tos when I am short on time but want something that tastes spectacular. If you'd like to give this a different style of Asian flair, use hoisin sauce in place of chutney and Chinese five-spice powder in place of garam masala. -Noelle Myers, Grand Forks, North Dakota

INDIAN SPICED BARBECUED LAMB

Indian spiced barbecued lamb image

Yogurt-based marinades create a delicious thin crust when they char, so are ideal for barbecues

Provided by Barney Desmazery

Categories     Dinner, Lunch, Main course

Time 5h

Number Of Ingredients 8

1 butterflied leg of lamb , about 2.5kg/5lb 8oz (ask your butcher to do this for you)
finger-length piece ginger , chopped
4 garlic cloves , roughly chopped
1 tbsp each turmeric , garam masala and cumin seeds
1 tsp paprika
handful coriander leaves, plus extra sprigs to serve
juice 1 lemon
150ml natural yogurt

Steps:

  • Using a hand blender or mini food processor, whizz marinade ingredients to a smooth paste, then season with salt. Lay the lamb in a ceramic dish and coat with the marinade. Cover in cling film and leave to marinate in the fridge for at least 4 hrs or preferably overnight.
  • If you are using a charcoal barbecue, wait for the coals to become white and glowing (light the barbecue about an hour before you want to cook the lamb). If using a gas barbecue, cook the lamb over medium heat. Lift lamb out of the marinade and barbecue, flesh-side down, for about 25 mins. Flip it over and give the fat side about 15 mins. When the lamb has a dark brown crust and is cooked to your liking, leave it to rest on a board for 15 mins. (If the weather forces you indoors, the lamb can be roasted at 220C/200C fan/gas 7 for about an hour for pink meat; the breads can be cooked on a very hot griddle).
  • To serve, carve the lamb into thick slices and scatter with the coriander and some of the Pickled red onion (see below). Serve the remaining onion in a dish alongside the raita and breads (see recipes, below).

Tips:

  • Choose high-quality lamb: For the best flavor, select lamb that is fresh and well-marinated. Look for cuts that have a good amount of marbling, as this will help keep the meat juicy and tender during cooking.
  • Use a variety of spices: Indian cuisine is known for its bold flavors, so don't be afraid to use a variety of spices in your lamb wraps. Some common spices used in Indian cooking include cumin, coriander, turmeric, chili powder, and garam masala.
  • Don't overcook the lamb: Lamb is a delicate meat, so it's important not to overcook it. Cook the lamb until it is just cooked through, or to your desired doneness. Overcooked lamb will be tough and chewy.
  • Use fresh vegetables: Fresh vegetables add a pop of color and flavor to lamb wraps. Some common vegetables used in Indian wraps include tomatoes, cucumbers, onions, and cilantro.
  • Serve with your favorite dipping sauce: Lamb wraps can be served with a variety of dipping sauces, such as mint chutney, yogurt sauce, or tamarind sauce.
