12 ounces smoked sausage, chopped
1 large onion, chopped
2 ribs celery, sliced
1 tablespoon minced garlic
3 sprigs fresh thyme, leaves only
½ teaspoon ground black pepper
2 (14.5 ounce) cans sauerkraut, drained
1 pound red potatoes, cubed
5 cups chicken broth
6 fluid ounces hard apple cider

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add sausage and cook until caramelized and fat is rendered, about 4 minutes. Add onion, celery, garlic, thyme leaves, and pepper. Cook for 3 more minutes. Cancel Saute mode.
  • Add sauerkraut, potatoes, chicken broth, and hard cider to the pot. Close and lock the lid. Select High pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 minutes for pressure to build.

Steps:

  • Drain and rinse the sauerkraut. Give it a light squeeze to remove most of the water. You don't want it bone dry. Mix the sauerkraut with the onion, garlic, salt and pepper.
  • Put 1 cup of water in the bottom of the Instant Pot.
  • Add the sauerkraut in a single layer on the bottom of the IP.
  • Cut the sausage into chunks and place it on top of the sauerkraut.

2 cups sauerkraut ((drained))
1/2 onion ((thinly sliced))
1 teaspoon mustard powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

1/2 pound green beans ((trimmed))

Steps:

  • Add the small potatoes to the Instant Pot along with a half cup of water.
  • Add the drained sauerkraut, sliced onion, and seasonings to an insert, mix. Place the insert right on top of the potatoes.
  • Arrange the sausages on top of the sauerkraut in an insert.
  • Place a bundle of foil-wrapped green beans on top.

2 pounds Smoked Sausage or Kielbasa (cut in chunks)
2 pounds Sauerkraut (jar or bag works fine)
6 Potatoes (washed & cubed - I prefer Yukon Gold potatoes that don't need peeled)
3 sprigs Rosemary (Dill can be substituted)
1 cup beer (your favorite flavor - we like Blue Moon or Yuengling)
2 tablespoons vegetable oil (optional for browning sausage)

Steps:

  • Browning sausage on saute setting in Instant Pot is optional. Some enjoy the flavor that browning brings out. Brown sausage in 2 tablespoons of oil if doing this step.
  • Drain most of the liquid from sauerkraut and place in the bottom of a 6 or 8 quart Instant Pot.
  • Add cubed potatoes, chunks of sausage and sprigs of Rosemary.

2 lbs cold pack sauerkraut, rinsed and drained
1 cup apple juice (or apple cider)

1 apple - peeled, cored, and diced
½ cup beer
½ teaspoon sea salt
