1 pound bulk Italian sausage
3 cups mashed potatoes
1 cup chopped onion
3/4 cup chopped green pepper
2 garlic cloves, minced
1 tablespoon vegetable oil
2 cups sliced fresh mushrooms
2 cups chopped fresh tomatoes
1 can (2-1/4 ounces) sliced ripe olives, drained
1 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley or 2 teaspoons dried parsley flakes

Steps:

  • In a skillet, cook sausage until no longer pink; drain. Place in a greased 9-in. square baking dish. Top with potatoes. In the same skillet, saute onion, green pepper and garlic in oil for 5 minutes or until vegetables are crisp-tender. , Stir in the mushrooms, tomatoes, olives, basil, salt and pepper. Spoon over potatoes to within 1 in. of edge of dish. Sprinkle Parmesan cheese and parsley on top. Bake, uncovered, at 350° for 30-35 minutes or until top is lightly browned.

1 garlic clove, smashed
1 teaspoon olive oil
1 cup skim evaporated milk
3 tablespoons all-purpose flour
2 teaspoons hot mustard, your favourite
1/2 teaspoon salt
1/2 teaspoon dried sweet basil leaves
1/4 teaspoon sugar
1/4 teaspoon dried oregano
4 medium unpeeled new potatoes, thinly sliced, about 4 cups
1/8 teaspoon cayenne pepper
4 medium tomatoes, sliced 1/4 inch thick
1 tablespoon parmesan cheese, grated

Steps:

  • Sauté onion and garlic in olive oil in medium nonstick fry pan until onion is soft.
  • Combine evaporated milk and flour in small bowl, whisk until smooth.

1 lb potato, peeled,cut into even pieces,boiled until tender and then sliced
1 tablespoon lite olive oil
1/2 lb mushroom, sliced
1 medium green pepper, sliced
1 medium red pepper, sliced
1/2 medium onion, chopped
3 eggs, beaten
1/4 teaspoon seasoning salt
1 1/2 cups light cream or 1 1/2 cups whole milk
1/2 lb bacon, fried and crumbled,well drained on paper towell
2 large tomatoes, peeled,seeded and chopped

Steps:

  • After cooking the potatoes let them stand for 5 minutes before slicing.
  • Place the sliced potatoes in a 9" quiche dish or other oven proof dish.

2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges

3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
