1 medium zucchini, cut into 1/2-inch pieces

1 . In a large saucepan, cook sausage, onion and pepper over medium heat 4-6 minutes or until sausage is no longer pink and vegetables are tender, breaking up sausage into crumbles; drain.
2 . Add broth, tomatoes, basil and parsley; bring to a boil. Stir in zucchini and orzo; return to a boil. Cook, covered, 10-12 minutes or until zucchini and orzo are tender. Yield: 6 servings.

Steps:

  • 1. In a large saucepan, cook sausage, onion and pepper over medium heat 4-6 minutes or until sausage is no longer pink and vegetables are tender, breaking up sausage into crumbles; drain. 2. Add broth, tomatoes, basil and parsley; bring to a boil. Stir in zucchini and orzo; return to a boil. Cook, covered, 10-12 minutes or until zucchini and orzo are tender. Yield: 6 servings.

Tips:

  • Choose the right zucchini: Look for firm, unblemished zucchini with a deep green color. Avoid zucchini that are too large, as they may be bitter.
  • Wash and trim the zucchini: Before using, wash the zucchini thoroughly and trim off the ends.
  • Don't peel the zucchini: The skin of the zucchini is where most of the nutrients are, so don't peel it.
  • Use a variety of vegetables: In addition to zucchini, you can add other vegetables to your soup, such as carrots, celery, onions, and tomatoes.
  • Use a good quality broth: The broth is the base of your soup, so make sure to use a good quality broth. You can use vegetable broth, chicken broth, or beef broth, depending on your preference.
  • Season to taste: Add salt, pepper, and other herbs and spices to taste.
  • Don't overcook the soup: Zucchini soup is best when it is cooked just until the vegetables are tender. Overcooking the soup will make the vegetables mushy.
  • Serve with a garnish: A dollop of sour cream, a sprinkling of grated Parmesan cheese, or a few croutons make a nice garnish for zucchini soup.

Conclusion:

Zucchini soup is a delicious, healthy, and easy-to-make soup that is perfect for any occasion. So next time you are looking for a quick and easy soup recipe, give zucchini soup a try. You won't be disappointed.
