Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 14

1 pound fresh chorizo sausage, casing removed
1/4 cup extra-virgin olive oil
2 cloves garlic, finely chopped
1 medium carrot, finely chopped (about 2/3 cup)
1 large celery stalk, finely chopped (about 2/3 cup)
1 small onion, finely chopped (about 1 1/4 cups)
One 3-ounce piece Genoa salami, diced
One 28-ounce can crushed tomatoes
Kosher salt
1/2 teaspoon freshly ground black pepper
2 1/2 cups baby arugula
1/2 cup coarsely chopped fresh basil
1 pound penne rigate pasta
1 cup finely grated Parmesan

Steps:

  • In a large nonstick skillet, cook the chorizo over medium-high heat until cooked through, breaking up the chorizo into 1/3- to 1/2-inch pieces with a wooden spoon, 12 to 14 minutes. Drain on paper towels and cool.
  • Heat the oil in the same skillet over medium heat. Add the garlic, carrots, celery and onions. Cook until the vegetables are tender but not at all brown, stirring often, 8 to 10 minutes. Add the salami and tomatoes. Bring the sauce to a simmer. Cover, reduce the heat to low and cook gently until the flavors blend, stirring occasionally, 15 to 20 minutes. Season with the 1/4 teaspoon salt and the pepper. Remove the skillet from the heat and add the arugula and basil. Stir until wilted.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water. Place the pasta into a serving dish.
  • Add the chorizo sauce to the pasta. Toss to combine, adding the reserved pasta water, if needed, to loosen the sauce.
  • Top with the Parmesan and serve.

I haven't made this yet. Comes from a book called "Restaurant Secrets". I have, however, eaten at this restaurant, and the food has always been delicious. Cleaning out my cookbook cabinet and getting ready to put a bunch in a garage sale. So, posting some recipes I'd still like to try.

J-STYLE PENNE

I love pasta and usually cook them with basic Italian sauces such as marinara and alfredo, but sometimes cook light with the flavor of soy sauce. This is also good for cleaning up vegetables in your refrigerator on weekend.

Tips:

  • Use high-quality pasta: Look for pasta made with durum wheat semolina, which is the hardest type of wheat and produces a firm, chewy texture.
  • Cook the pasta al dente: This means cooking it until it is tender but still has a slight bite to it. This will help prevent the pasta from becoming mushy when you add it to the sauce.
  • Don't rinse the pasta after cooking: Rinsing the pasta will remove the starch, which is what helps the sauce stick to the pasta.
  • Use a flavorful sauce: The sauce is what really makes the dish, so be sure to use a sauce that has a lot of flavor. You can use a simple tomato sauce, a creamy Alfredo sauce, or a pesto sauce.
  • Add some vegetables: Vegetables add flavor, texture, and nutrients to the dish. Some good vegetables to add to J-Style penne include broccoli, cauliflower, zucchini, and spinach.
  • Garnish with fresh herbs: Fresh herbs add a pop of color and flavor to the dish. Some good herbs to garnish J-Style penne with include basil, parsley, and oregano.

Conclusion:

J-Style penne is a delicious and easy-to-make dish that can be enjoyed by people of all ages. With its combination of tender pasta, flavorful sauce, and fresh vegetables, J-Style penne is a surefire hit at any gathering. So next time you're looking for a quick and easy meal, give J-Style penne a try. You won't be disappointed.
