CHEF JOHN'S CHOCOLATE CHIP COOKIES

Chef John's Chocolate Chip Cookies image

Crispy around the edges, chewy and chocolaty in the middle, and thin, oh so thin. My 'secret' formula has been adapted from Alton Brown's famous, 'The Thin' recipe, and is fairly foolproof. The only real variable is the baking time, since we all scoop slightly different amounts. And yes, of course you can add nuts to yours!

Yield 16

Number Of Ingredients 10

2 ¼ cups all-purpose flour
1 ¼ teaspoons kosher salt
1 teaspoon baking soda
1 cup unsalted butter, very soft
1 cup white sugar
½ cup light brown sugar
1 large egg
2 tablespoons milk
1 ¼ teaspoons vanilla extract
2 cups semisweet chocolate chips

Steps:

  • Whisk flour, salt, and baking soda together in a bowl. In a separate bowl, cream the butter, white sugar, and brown sugar together until mixture is light and fluffy, 3 to 4 minutes. Add the egg, milk, and vanilla extract. Whisk liquids together in small areas around the bowl, then all together to avoid separation.
  • Pour dry ingredients into the wet ingredients; stir until flour is thoroughly mixed in. Stir in the chocolate chips.
  • Transfer dough to a resealable plastic bag. Refrigerate until dough is firm, at least 2 hours.
  • Preheat oven to 375 degrees F (190 degrees C). Line baking sheet with parchment paper.
  • Scoop out rounded tablespoons of dough and place on prepared baking sheet, leaving 4 inches of space between cookies (about 8 per sheet). Bake in preheated oven until cookies are golden brown, about 12 minutes. Slide parchment and cookies onto a cooling rack for a few minutes. Remove parchment and finish cooling the cookies on the rack.

CHOCOLATE CHIPS COOKIES WITH TENNESSEE WHISKEY

Chocolate Chips Cookies with Tennessee Whiskey image

Here in Tennessee, we would put whiskey in our scrambled eggs if it was socially acceptable. Luckily, whiskey in your cookies is both acceptable and tasty! Get a glass of milk (or whiskey) to have with cookies.

CHEWY CHOCOLATE CHIP & JACK DANIEL'S COOKIES RECIPE

CHEWY CHOCOLATE CHIP & JACK DANIEL'S COOKIES Recipe image

Provided by bubbles7380

Number Of Ingredients 16

For Cookies:
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks salted butter, melted and cooled to room temp
1 cup dark brown sugar
1/2 cup granulated sugar
1 large egg + 1 egg yolk
2 teaspoons vanilla extract
1 12-ounce bag Ghirardelli Semi-Sweet Chocolate Chips
For Whiskey Frosting:
2/3 cups Ghirardelli Semi-Sweet Chocolate Chips
3 Tablespoons salted butter, softened
1/4 cup heavy cream
2 Tablespoons Jack Daniel's Whiskey
Crushed pretzels for topping

Steps:

  • For Cookies: Heat oven to 375 degrees and line baking sheets with parchment paper. In a mixing bowl, stir together flour, salt, and baking soda. Set aside. In the bowl of a stand mixer, cream together butter, brown sugar and granulated sugar. Beat on medium speed for two minutes. Add egg, egg yolk and vanilla extract. Remove bowl from mixer and stir in chocolate chips by hand. Using a 1/4 cup ice cream scoop, measure out cookies and place on prepared baking sheets. Use your fingers to flatten the dough slightly. Bake for 12 to 15 minutes, or just until edges are set and are lightly brown. Remove from oven and cool on baking racks while you prepare the frosting. NOTE: Don't place cookies too close together on the baking sheet or they will run together! The key to chewy cookies is to avoid over-baking them! They will continue to set up after they are removed from the oven. For Frosting: Place chocolate in a microwave-safe bowl and heat until melted, stirring every 30 seconds. Whisk in the butter until melted. Add the cream and Jack Daniel's Whiskey, stirring until smooth. Immediately spoon frosting over cooled cookies. Top with crushed pretzels and allow to set. Enjoy

Tips:

  • Use high-quality chocolate chips. The better the chocolate chips, the better your cookies will taste. Look for chocolate chips that are made with real cocoa butter and have a high cacao content.
  • Don't overmix the dough. Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at the right temperature. The ideal temperature for baking chocolate chip cookies is 375 degrees Fahrenheit. If you bake the cookies at a lower temperature, they will be too soft and chewy. If you bake them at a higher temperature, they will be too crispy.
  • Let the cookies cool completely before eating them. The cookies will continue to cook as they cool, so it's important to let them cool completely before eating them. This will help them develop their full flavor and texture.

Conclusion:

Chocolate chip cookies are a classic American dessert that is loved by people of all ages. They are easy to make and can be customized to your own liking. With a few simple tips, you can make the perfect chocolate chip cookies every time.
