JALAPENO BERRY LEMONADE

1 1/2 cups blueberries
1 1/2 cups raspberries
1 1/2 cups blackberries
3/4 cup sugar
2 jalapenos, seeded, deveined and sliced (or leave in some seeds for extra spice)
1 lemon, juiced
6 cups sugar
6 cups lemon juice (about 30 lemons)

Steps:

  • For the jalapeno-berry syrup: Put the blueberries, raspberries, blackberries, sugar, jalapenos and lemon juice in a saucepan. Bring the mixture to a boil, stirring constantly, and then reduce the heat and simmer until thick, 20 to 25 minutes.
  • Strain the mixture through a fine-mesh strainer and press on the fruit with a wooden spoon to get all of the liquid out. Set the berry syrup aside to cool.
  • For the simple syrup: Mix the sugar with 6 cups water and stir until the sugar is completely dissolved.
  • For the lemonade: Pour the jalapeno-berry syrup and lemon juice into a large vat. Add 6 cups of the simple syrup and 8 cups of cold water and stir to combine. Top up the container with plenty of ice before serving.

SPICY LEMONADE WITH JALAPEñO ICE CUBES

2 medium jalapeños, stemmed and sliced into 12 slices each
2 quarts lemonade, store-bought or homemade
2 to 3 medium jalapeños, stemmed, seeded and sliced into 1/4-inch slices
2 to 3 lemons, sliced into wheels

Steps:

  • For the jalapeñoice cubes: Place a jalapeño slice in each well of 2 ice cube trays. Fill with water and freeze until solid, about 4 hours.
  • For the lemonade: In a beverage dispenser or pitcher, add the lemonade, jalapeño slices and lemon slices. Let sit, refrigerated, for at least 1 hour before serving.
  • Serve in glasses filled with jalapeño ice cubes.

1 cup water
½ cup white sugar
1 cucumber, sliced
6 lemons, juiced

Steps:

  • Make a simple syrup by stirring the water and sugar together in a saucepan over medium heat; heat until just about to boil and the sugar has dissolved. Place in refrigerator 30 minutes, or until cool.
  • Place the cucumber slices in a blender or food processor; blend until mashed into a pulp. Pour the cucumber pulp into a fine mesh strainer place over a bowl to catch the liquid; allow to sit until you have about 2/3 cup of liquid from the cucumber, about 15 minutes.
  • Stir the simple syrup, cucumber liquid, and lemon juice together in a pitcher. Serve cold.

A southwestern flare for a summertime drink favorite! For mild flavor, leave the jalapeno in for 4-8 hours. For a spicier beverage, leave the pepper in longer. I leave mine in for 12 hours and it has a good bit of zing. Beautiful presentation too!

1 1/2 cups fresh lemon juice, fresh squeezed
7 cups water, ice cold
1 cup granulated sugar
2 lemons, sliced into rounds
1 jalapeno, fresh
8 cups ice, for serving

Steps:

  • Stir water, freshly squeezed lemon juice and sugar until sugar is disolved.
  • Add lemon rounds to mixture.
  • With sharp knife, poke 5-10 holes in whole jalapeno and add to lemonade.
  • Put in fridge to chill for 30 minutes.
  • Serve over ice.

2 pounds Kirby cucumbers, sliced diagonally 1/4 inch thick
4 red jalapenos, sliced diagonally 1/4 inch thick
3 small onions, cut into 1/2-inch wedges
3 tablespoons coarse salt
2 cups cider vinegar
1 3/4 cups packed light-brown sugar
1 tablespoon mustard seed
3/4 teaspoon celery seed
3/4 teaspoon ground turmeric

Steps:

  • In a bowl, toss cucumbers, jalapenos, onions, and salt. Cover; refrigerate 2 hours.
  • In a saucepan over medium heat, cook vinegar, sugar, mustard seed, celery seed, and turmeric, stirring to dissolve sugar.
  • Rinse and drain cucumber mixture. Pour vinegar mixture over; let cool. Refrigerate, covered, up to 3 weeks.
