1 tablespoon white sugar
2 teaspoons kosher salt
1 (.25 ounce) package active dry yeast
4 ½ cups bread flour
¼ cup unsalted butter, melted
1 large egg yolk
1 tablespoon water
10 cups water
⅔ cup baking soda
¼ cup kosher salt, divided - or to taste
18 hot dogs
