TOFFEE BARS

Time 3h5m

Yield 24 bars

Number Of Ingredients 9

12 tablespoons (1 1/2 sticks) unsalted butter, plus more for the pan
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon grated nutmeg
1/2 teaspoon fine sea salt
2 cups (lightly packed) light brown sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup whole hazelnuts (with or without skins)

Steps:

  • Preheat the oven to 350 degrees F.
  • Lightly butter a 9-by-13-inch baking pan, preferably a light-colored aluminum or steel pan. (Dark pans cause over-browning.)
  • Heat a large skillet over medium heat, add the butter, and cook until the butter foams and turns amber brown, 3 to 5 minutes. Pour the butter into a large bowl and set aside until cool enough to touch.
  • Meanwhile, sift the flour, baking powder, nutmeg and salt together into a bowl.
  • In the bowl of a stand mixer, or using a hand mixer, combine the brown sugar with the butter and mix until combined. Add the eggs and vanilla, and mix until smooth, thick and light, 3 to 5 minutes. (You want to make sure the mixture is very light and airy, like frosting.) Stir in the sifted flour mixture and mix by hand until incorporated.
  • Pour the batter into the prepared baking pan and spread it into an even layer, smoothing the top. Scatter the hazelnuts, pressing lightly to submerge them about halfway in the batter.
  • Bake until the surface wrinkles evenly and turns nut brown, about 35 minutes. Let cool completely, at least 2 hours, before cutting into 2-inch bars.

Number Of Ingredients 5

40 - salted saltine crackers or enough to line your pan
1 1/2 cup(s) margarine
1 cup(s) packed brown sugar
2 cup(s) (16 oz) semi sweet chocolate chips
- (optional) enough crushed nuts to cover the top

Steps:

  • Preheat oven to 400 dF and line a cookie sheet or jelly roll pan with foil. Then line the pan with saltine crackers in a single layer until bottom of pan is covered.
  • In a small pot combine sugar and butter and bring to a boil. Once mixture is at a boil, continue boiling for 3 minutes. Mixture should be a deep caramel color. Immediately pour over saltines and spread to cover crackers completely. Bake at 400 dF, for 5 to 6 minutes. The crackers will look all bubbly.
  • Remove from oven and sprinkle chocolate chips over the top and let sit a couple of minutes to melt (or set back in oven a bit to speed melting (or melt the chocolate chips in the microwave for about 1 minute) then spread it over saltines.
  • After spreading crackers with the melted chocolate then top with chopped nuts if desired. Jayne used pecans, you can use any chopped nuts you desire (or no nuts).
  • Cool completely before you break into pieces. Jayne set the pans (yes, we made 2-pans) in the refrig over night and we broke them into pieces the next morning. So quick, sooo easy and delish!!!

Tips:

  • Use fresh butter and eggs: This will give your toffee bars a richer flavor and texture.
  • Cook the toffee mixture to the right temperature: If you don't cook it long enough, the toffee will be too soft. If you cook it too long, the toffee will be too hard.
  • Let the toffee cool completely before cutting it: This will help prevent the toffee from crumbling.
  • Store the toffee bars in an airtight container at room temperature: They will keep for up to 2 weeks.
  • You can also freeze the toffee bars for up to 2 months: Just wrap them tightly in plastic wrap and foil.
  • To make chocolate toffee bars: Simply melt some chocolate chips and spread them over the top of the cooled toffee before cutting it.
  • To make peanut butter toffee bars: Simply add some peanut butter to the toffee mixture before cooking it.
  • To make almond toffee bars: Simply add some chopped almonds to the toffee mixture before cooking it.
  • Get creative and experiment with different flavors and toppings: The possibilities are endless!

Conclusion:

Toffee bars are a delicious and easy-to-make treat that can be enjoyed by people of all ages. With just a few simple ingredients, you can create a batch of toffee bars that will be the hit of your next party or potluck. So what are you waiting for? Give this recipe a try today!
