JELLO CRANBERRY SALAD
There's not a recipe quite like this that I can find on the internet so I'm posting it here for safe keeping. My mom made this for every Thanksgiving and Christmas and now I'm the one that makes it. It can be made in a jello mold of like I do, in a crystal bowl.

Steps:
- Either early in the day or the night before drain the pineapple reserving the juice. Squeeze out as much juice as you can to yield at least 2 cups. You will need it in the next step.
- In a very large bowl, dissolve the jello in the 2 cups boiling water. When thoroughly dissolved add the reserved pineapple juice and stir well. Refrigerate until the soft set stage.
- Meanwhile grind the cranberries in a food grinder ( I use my KitchenAid with the grinder attachment). Add the ground cranberries and the remaining ingredients to the soft set jello. Mix well, cover and chill until set or pour into your favorite mold and chill until set.

Tips:
- Choose Fresh Ingredients: Use fresh, ripe cranberries for the best flavor and texture. Freshly squeezed orange juice and lemon juice also add a burst of brightness and acidity to the salad.
- Don't Overcook the Cranberries: Boiling the cranberries for too long can make them mushy. Simmer them gently until they just begin to soften, about 5-7 minutes.
- Chill Thoroughly: Cranberry salad needs time to chill and set before serving. Refrigerate it for at least 4 hours, or overnight, to allow the flavors to meld and the salad to firm up.
- Add Nuts for Crunch: Toasted walnuts or pecans add a nice crunch and nutty flavor to the salad. You can also use other nuts, such as almonds or pistachios.
- Garnish with Fresh Herbs: A sprinkling of fresh herbs, such as mint or rosemary, adds a pop of color and freshness to the salad.
- Make Ahead: Cranberry salad can be made ahead of time, making it a convenient dish for busy holiday gatherings. Simply prepare the salad according to the recipe and refrigerate it for up to 3 days before serving.
