JERK CHICKEN WINGS

Jerk Chicken Wings image

These jerk chicken wings were so flavorful, so different, and so additively delicious, that I may have eaten my last Buffalo wing. Okay, I didn't mean that, but these really are amazing; a perfect balance of sweet, sour, salty, and spicy. I'm usually pretty casual about you changing my recipes, but I'm going to have to insist you not change any of the key ingredients, which are, every one of them.

GRILLED JERK-SPICED CHICKEN WINGS WITH MANGO SAUCE

Grilled Jerk-Spiced Chicken Wings with Mango Sauce image

At one of the highest levels of heat comes one of Jamaica's most famous exports. Not reggae, not rum...JERK CHICKEN. We can handle the heat, but we're not here to show off how much pain we can tolerate. Looking to hit a delicate balance between heat and flavor, we made a fiery jerk-inspired spice rub for chicken wings and added a sweet and spicy mango-cilantro sauce to temper the heat.

Provided by Food Network

Time 35m

Yield 4 servings

Number Of Ingredients 19

2 tablespoons paprika
1 teaspoon cayenne
2 teaspoons ground allspice
1/2 teaspoon ground nutmeg
1/2 tablespoon garlic powder
1/4 teaspoon ground cloves
1 teaspoon minced ginger
2 cloves garlic, minced
2 teaspoons minced fresh thyme
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 pounds chicken wings, separated at the joint
1/3 cup orange juice
1/2 cup mango jam
1 tablespoon honey
1/4 cup cilantro leaves, plus more for garnish
1 tablespoon finely grated orange zest
2 scallions, chopped
1 Scotch bonnet pepper, chopped (see Cook's Note)

Steps:

  • Prepare a grill for high indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off).
  • For the wings: Add the paprika, cayenne, allspice, nutmeg, garlic powder, cloves, ginger, minced garlic, thyme, salt and pepper to a small bowl and stir to combine. Reserve 1 tablespoon of the spice mixture for the mango sauce.
  • Put the chicken wings in a large bowl with the remaining spice mixture. Toss to evenly coat. Reserve the wings while you make the sauce.
  • For the mango-cilantro sauce: Put the orange juice, mango jam, 1 tablespoon reserved spice mixture, honey, cilantro, orange zest, scallions and Scotch bonnet in a blender. Blend until smooth. Pour into a bowl and reserve at room temperature while you grill the wings.
  • Place the chicken wings on the grill over the indirect heat zone. Cover and grill for 5 minutes. Flip the wings and continue to cook for an additional 5 minutes. Move the wings directly over the heat and cook until nicely charred and cooked through, about 5 minutes.
  • Remove the wings from the grill and toss with the reserved sauce. Pile onto a platter and garnish with chopped cilantro.

JERK GRILLED CHICKEN WINGS

Spicy, citrus, earthy, with the right amount of thyme. These wings should be a hit as long as your guests are brave enough to take some Caribbean heat. I like to serve this with a mango, cilantro, sour cream, mayonnaise, and buttermilk dipping sauce.

Categories     Appetizers and Snacks     Spicy

Time 4h50m

Yield 4

Number Of Ingredients 15

¼ cup fresh squeezed orange juice
2 tablespoons lemon juice
2 tablespoons lime juice
1 teaspoon salt
2 teaspoons ground black pepper
1 tablespoon chopped fresh thyme
1 tablespoon chopped garlic
1 tablespoon chopped fresh ginger
1 habanero pepper, seeded and chopped (use gloves)
1 tablespoon curry powder
½ teaspoon ground allspice
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
½ cup vegetable oil

Steps:

  • Mix together the orange juice, lemon juice, lime juice, salt, black pepper, thyme, garlic, ginger, habanero pepper, curry powder, allspice, nutmeg, and cinnamon in a bowl. Whisk in the vegetable oil. Pour 3/4 of the marinade into a resealable plastic zipper bag, and place the chicken wing pieces into the bag. Squeeze out any air, and mix the wing pieces with the marinade, and refrigerate from 4 to 12 hours. Place the remaining 1/4 of the marinade in a small bowl, and refrigerate until grilling time.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the wing pieces from the bag of marinade, and discard the used marinade. Sprinkle the wings with salt and pepper to taste, and sear on the hottest part of the grill until the wings begin to brown, about 4 minutes per side.
  • Move the wings to a less-hot part of the grill, baste with the unused portion of the marinade, and close the grill. Grill until the wings are golden brown, show good grill marks, are no longer pink in the center, and the juices run clear, 10 to 15 more minutes. Baste again with marinade and turn after 5 to 8 minutes.

GRILLED JERK CHICKEN WINGS

Grilled Jerk Chicken Wings image

Step up your tailgating game with these super-flavorful jerk wings.

Provided by Food Network Kitchen

Categories     main-dish

Time 5h30m

Yield 6 to 8 servings

Number Of Ingredients 13

1 cup scallions, whites and greens roughly chopped (6 to 8 scallions), plus extra sliced for garnish
1/3 cup vegetable oil, plus additional for oiling the grill grates
1/3 cup soy sauce
2 tablespoons roughly chopped fresh ginger
2 tablespoons light brown sugar, packed
1 tablespoon fresh thyme leaves, plus a small handful of sprigs
3/4 teaspoon ground allspice
1/2 teaspoon ground cinnamon
3 cloves garlic, roughly chopped
2 Scotch bonnet peppers, halved and seeds removed (see Cook's Note)
Zest and juice of 1 lime, plus wedges for serving
Kosher salt and freshly ground black pepper
3 pounds chicken wings, wingettes and drumettes separated and tips discarded

Steps:

  • Combine the scallions, oil, soy sauce, ginger, brown sugar, thyme leaves, allspice, cinnamon, garlic, Scotch bonnet peppers, lime zest and juice and 1/2 teaspoon ground black pepper in a food processor. Pulse until smooth. Reserve 1/2 cup marinade for basting later. Put the chicken wings and remaining marinade in a large resealable plastic bag. Rub the thyme sprigs between your hands and add to the bag. Seal the bag and massage to distribute the marinade evenly. Refrigerate for at least 4 hours or up to overnight. Remove to room temperature 30 minutes before grilling.
  • Preheat a grill for indirect and direct grilling over medium heat. For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Lightly oil the grill grates. Remove the wings from the bag and season all over with salt. Add the wings to the indirect-heat side. Cover and cook, flipping halfway through, about 20 minutes (the wings will be almost completely cooked at this point). Uncover the grill and baste the wings with some of the reserved marinade. Flip the wings onto the hot side of the grill to crisp up and cook, about 3 minutes, then baste, flip and cook until the wings are cooked all the way through, about 4 minutes more.
  • Sprinkle with sliced scallions and serve with lime wedges.

JERK CHICKEN WINGS

Jerk Chicken Wings image

Provided by Mark Bittman

Categories     easy, appetizer

Time 45m

Number Of Ingredients 12

3 pounds of chicken wings
4 roughly chopped scallions
1 peeled shallot
1/2 habanero or Scotch bonnet chili
1/2-inch peeled fresh ginger
2 garlic cloves
1 tablespoon fresh thyme leaves
1 tablespoon allspice berries
1 tablespoon honey
2 tablespoons lime juice
1/4 cup vegetable oil
salt and pepper

Steps:

  • Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
  • Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
  • Put the wings on the cool side of the grill. Cover the grill and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
  • While the wings cook, combine 4 roughly chopped scallions, 1 peeled shallot, 1/2 habanero or Scotch bonnet chili, 1/2-inch peeled fresh ginger, 2 garlic cloves, 1 tablespoon fresh thyme leaves, 1 tablespoon allspice berries, 1 tablespoon honey, 2 tablespoons lime juice, 1/4 cup vegetable oil, salt and pepper in a food processor or blender. Blend or process into a paste.
  • When the wings are cooked, put them in a large bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill, and cook, uncovered, turning as necessary, until they're nicely browned on both sides.

Tips:

  • Choosing the right chicken wings: Select plump and meaty chicken wings for the best results. Ensure they are fresh or thawed properly if frozen.
  • Creating the perfect marinade: Make the jerk marinade at least 30 minutes before cooking to allow the flavors to infuse into the chicken. Experiment with different ratios of Scotch bonnet peppers and allspice to suit your spice preference.
  • Grilling or baking: You can either grill or bake the chicken wings. If grilling, preheat your grill to medium-high heat and cook the wings for 10-12 minutes per side, or until cooked through. If baking, preheat your oven to 400°F (200°C) and bake the wings for 20-25 minutes, or until crispy and cooked through.
  • Cooking temperature: Use a meat thermometer to ensure that the internal temperature of the chicken wings reaches 165°F (74°C) to ensure they are cooked safely and thoroughly.
  • Serving suggestions: Serve the jerk chicken wings hot with your favorite dipping sauce, such as ranch dressing, blue cheese dressing, or a spicy mango sauce. Accompany them with sides like grilled pineapple, coleslaw, or roasted sweet potatoes.

Conclusion:

Experimenting with various jerk marinade recipes and cooking techniques will allow you to create delicious and flavorful jerk chicken wings that are perfect for parties, game days, or a tasty weeknight meal. Whether you prefer grilled or baked wings, the blend of spicy, sweet, and smoky flavors will tantalize your taste buds and leave you craving more. Remember to adjust the spice level to your preference and enjoy the irresistible taste of these Caribbean-inspired chicken wings.
