¼ cup butter
1 large onion, diced
½ large green bell pepper, diced
1 (4 ounce) jar chopped pimento peppers
2 eggs
1 (8 ounce) package corn muffin mix (such as Jiffy®)
1 (4 ounce) can diced green chiles
1 (15.25 ounce) can whole kernel corn, with liquid
1 (15.25 ounce) can creamed corn
1 pint sour cream
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking pan.
  • Melt butter in a skillet over medium heat. Add onion, bell pepper, and pimento peppers and saute until tender, about 5 minutes.
  • Combine eggs, corn muffin mix, green chiles, whole corn, and creamed corn in a large bowl with the onion mixture. Stir together and pour into the prepared baking pan. Drop sour cream by the spoonful on top of the mixture; cover with Cheddar cheese.

1 (8 ounce) container sour cream
1 cup grated Cheddar cheese
½ cup butter
1 sleeve crushed buttery round crackers (such as Ritz®)

Steps:

I got this recipe from my sister-in-law many years ago. It is quite tasty and super easy. I like to make this dish around the holidays. I've seen different versions of this recipe floating around but I prefer this one. If you want to jazz it up you can add cheese or jalapenos. The possibilities are endless.

1 can(s) whole kernel yellow corn, undrained
1 can(s) cream style yellow corn
1 (8 oz.) carton sour cream
2 eggs, beaten
1 box jiffy corn muffin mix or homemade jiffy corn mix-see below my posting
1 stick butter, melted

  • 1. Mix all together and pour into large, lightly oiled casserole dish. Bake at 350°F for 55 to 60 minutes.
  • 2. **Homemade Jiffy Corn Mix Ingredients 2/3 c all-purpose flour 1/2 c yellow cornmeal 3 Tbsp granulated sugar 1 Tbsp baking powder 1/4 tsp salt 2 Tbsp vegetable oil OPTIONAL INGREDIENTS 1/2 c grated cheddar cheese (optional) 2 oz canned chillies (optional) 1/4 c drained chopped pimiento (optional) 1/2 c chopped onion (optional)
  • 3. 1 Combine first 5 ingredients in a bowl, mix well. 2 Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone. 3 If another recipe is calling for a box of Jiffy Corn Muffin Mix, add the above mixed ingredients to that recipe. 4 OPTIONAL: To mix, add any combination of optional ingredients you prefer. 5 Combine mix with egg and milk, mixing well.
