This is one sure way to ensure juicy chicken while obtaining lots of flavor. A meat injector will be needed, I got mine at Wal Mart for a couple bucks. Best served with white pepper/buttered rice.

LEMON-PEPPER FRIED CHICKEN

Lemon-Pepper Fried Chicken image

This lemon-pepper chicken was popular with my friends in grad school. We used to do the prep work at our desk and coffee table in the living room since we had only about 1 1/2 square feet of counter space in our tiny kitchenette. Serve chicken over rice with gravy, garnished with freshly ground pepper and lemon zest.

Number Of Ingredients 9

2 cups bread crumbs
3 tablespoons lemon-pepper seasoning
2 teaspoons dried basil
1 teaspoon dried oregano
1 ½ teaspoons garlic powder
salt to taste
4 skinless, boneless chicken breast halves
2 large eggs, beaten
vegetable oil for frying

Steps:

  • Mix bread crumbs, lemon-pepper seasoning, basil, oregano, garlic powder, and salt together in a shallow dish.
  • Pat chicken pieces dry with paper towels, dip in beaten eggs, and dredge through bread crumb mixture.
  • Heat enough oil to thickly coat the bottom of a frying pan over medium heat. Fry chicken until golden brown and no longer pink in the center, 8 to 10 minutes per side. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

Tips:

  • For the best flavor, use fresh lemon pepper seasoning. You can make your own by combining equal parts lemon zest and freshly ground black pepper, or you can purchase it pre-made.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • To get a crispy coating, make sure to coat the chicken strips in the flour mixture before dipping them in the buttermilk and then dredging them in the lemon pepper mixture.
  • Don't overcrowd the pan when cooking the chicken strips. Cook them in batches if necessary to avoid steaming them.
  • Serve the chicken strips immediately with your favorite dipping sauce, such as ranch dressing, honey mustard, or barbecue sauce.

Conclusion:

Juicy Lemon Peppered Chicken Strips are a delicious and easy-to-make dish that is perfect for any occasion. They are crispy on the outside and juicy on the inside, and the lemon pepper seasoning gives them a bright and flavorful taste. Serve them with your favorite dipping sauce and enjoy!
