This recipe is from Prevention Magazine. I wasn't sure about the mustard but we were all pleased by the results. The original recipe called for 1 1/2 tsp of salt but I used less.

1 teaspoon ground pepper
1/2 teaspoon ground cumin

4 salmon fillets, 6 oz each

Steps:

  • Mix together sugar, salt, pepper, cumin and mustard.
  • Press mixture onto fish.

2 tablespoons dark brown sugar, packed
1 1/2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon ground cumin
1/4 teaspoon mustard powder
4 salmon fillets, skin removed (6 ounces each)
1 teaspoon olive oil

Steps:

  • Stir together the sugar, salt, pepper, cumin, and mustard in a small bowl. Press the sugar mixture evenly onto the top surface of the fish.
