Categories     Fruit     Bake

Yield 3-8 people, depending

Number Of Ingredients 7

1 cup buttermilk or 1 cup regular milk
1 cup vanilla sugar* or 1 cup sugar plus 1/2 tsp vanilla extract
1 stick of unsalted butter, softened
1 cup flour, either all-purpose or self-rising will do; White Lily is the best brand
2 medium cans of sliced peaches in lite syrup
*How to make vanilla sugar:
Fill a large mason jar with sugar. Slice a vanilla bean long ways but don't open it up. Stick vanilla bean down in the mason jar filled with sugar. Close jar. Wait a week. If the sugar doesn't look every so slightly off-white, wait another week. Wah-la. Vanilla sugar. It is soooooo good. When we catered, it was the secret ingredient in several of our most popular desserts. DON'T TELL MOMMA I TOLD YOU ABOUT THE VANILLA SUGAR IN THE COBBLER.

Steps:

  • Preheat oven to 400. 1. Mix first four ingredients in a bowl enough to get the flour wet. Don't worry about lumps. 2. Open and pour the peaches WITH THE SYRUP into your baking dish. The one I use now is a 9x13x2. 3.Pour batter over the peaches. Don't worry about getting it perfectly distributed. The oven will take care of this. Plus, I don't trust perfect looking cobbler. 4.Set timer for 25-ish minutes. 5.Pull baking rack out and dot top of cobbler with some more butter. However much you like. Make sure to get some butter into the corners. It helps with hard sticky corner syndrome. Sprinkle more sugar on top too. However much you like. I probably use about a quarter cup but whatevs. 6.Turn pan around for even baking. Close door. Set timer for about 20-ish more minutes. 7.Take the cobbler out and let it set up for a few minutes, if you can stand it. It is worth the wait. Letting it set for a few minutes allows some kind of absorption of juice magic that makes the dough part even better. Serve with homemade whipped cream if you are from Georgia or want people to think you are from Georgia. If you aren't from Georgia, serve with good vanilla bean ice cream.
