1 whole Cauliflower
2 cups Mozzarella (shredded)
1/2 cup Cheddar (Aged Tasty)
1 cup Sour Cream
7 oz Bacon
1/2 medium Onion (sliced)
1 tbsp Italian Herb Mix
2 tsp Garlic Powder

Steps:

  • Preheat the oven to 180C/355F.
  • Break the cauliflower up into florets and blanch for 5 minutes (boil then quickly run under cold water) and drain well.
  • Add the cauliflower to a baking dish.
  • Add the sour cream and coat the cauliflower with it evenly.
  • Add half of the mozzarella and mix well.
  • Cut the bacon into strips and add on top, followed by the onion, herbs and garlic powder.

1 tablespoon butter
2 teaspoons olive oil
¼ cup minced onion
3 tablespoons all-purpose flour
2 cups milk
½ teaspoon salt
½ teaspoon ground black pepper
2 cups grated Cheddar cheese
½ cup panko bread crumbs, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Drizzle cauliflower with olive oil and wrap in aluminum foil.
  • Roast in the preheated oven for 30 minutes. Remove and dice into 1/2-inch pieces. Reduce oven temperature to 400 degrees F (200 degrees C).
