Key lime pie is a classic American dessert that is known for its tart and tangy flavor. It is made with a simple filling of key lime juice, sugar, eggs, and butter, all baked in a flaky pie crust. With just five ingredients, this recipe is easy to make and sure to impress your friends and family. The key to a great key lime pie is using fresh key lime juice. Key lime juice is more acidic and has a more intense flavor than regular lime juice, which gives the pie its signature tartness. If you can't find key lime juice, you can substitute regular lime juice, but the flavor will be slightly different.

Let's cook with our recipes!

KEY LIME PIE WITH 5 INGREDIENTS

Key Lime Pie With 5 Ingredients image

I wanted a quick and easy pie that would mimic the flavor of Key Lime Pie but without the fuss. I tried a popular on-line recipe but found that without a gelling ingredient, the pie was messy to serve and the slices ran together. To solve the problem, I added Instant Pudding Mix and was very pleasantly surprised with the result. Note: use a LARGE graham cracker crust (deep dish type). If your store only carries the small prepared graham crusts, use two crusts.

Categories     dessert

Time 1h3m

Yield 1 (9-inch) pie

Number Of Ingredients 9

1/3 of a 1-pound box graham crackers
5 tablespoons melted unsalted butter
1/3 cup sugar
3 egg yolks
2 teaspoons lime zest
1 (14-ounce) can sweetened condensed milk
2/3 cup freshly squeezed Key lime juice, or store bought
1 cup heavy or whipping cream chilled
2 tablespoons confectioners' sugar

Steps:

  • For the graham cracker crust: Preheat the oven to 350 degrees F.
  • Break up the graham crackers; place in a food processor and process to crumbs. If you don't have a food processor, place the crackers in a large plastic bag; seal and then crush the crackers with a rolling pin. Add the melted butter and sugar and pulse or stir until combined. Press the mixture into the bottom and side of a pie pan, forming a neat border around the edge. Bake the crust until set and golden, 8 minutes. Set aside on a wire rack; leave the oven on.
  • For the filling: Meanwhile, in an electric mixer with the wire whisk attachment, beat the egg yolks and lime zest at high speed until very fluffy, about 5 minutes. Gradually add the condensed milk and continue to beat until thick, 3 or 4 minutes longer. Lower the mixer speed and slowly add the lime juice, mixing just until combined, no longer. Pour the mixture into the crust. Bake for 10 minutes, or until the filling has just set. Cool on a wire rack, then refrigerate. Freeze for 15 to 20 minutes before serving.
  • For the topping: Whip the cream and the confectioners' sugar until nearly stiff. Cut the pie into wedges and serve very cold, topping each wedge with a large dollop of whipped cream.

PHOENICIAN'S KEY LIME PIE

Phoenician's Key Lime Pie image

When I moved from Lebanon to Florida spring of 1999, I brought with me my love for cooking and search for new recipes. The famous key lime pie was new to me. It was a friend's best dessert, and he used to buy it from Costco every time we go for shopping. I tasted the pie at several places, but they were missing that wow flavor. I kept playing with the recipe, and the right flavor is found. I live now in North Bay, Ontario, and we only get the Key Limes twice a year, so sometimes I substitute with fresh lime juice. I hope you all enjoy!!

Tips:

  • Use fresh key limes for the best flavor. Key limes have a more intense flavor than regular limes, and they will give your pie a brighter, more citrusy taste.
  • Zest the key limes before juicing them. The zest contains a lot of flavor, so it's important to get it into your pie. You can use a microplane or a zester to remove the zest from the limes.
  • Don't overmix the filling. Overmixing can make the filling tough, so mix it just until the ingredients are combined.
  • Bake the pie until the filling is set. The filling should be firm to the touch and not jiggly. This will usually take about 30 minutes.
  • Chill the pie before serving. This will help the filling to set and make it easier to slice.

Conclusion:

Key lime pie is a classic dessert that is easy to make and always a crowd-pleaser. With its creamy, tangy filling and graham cracker crust, it's the perfect pie for any occasion. So next time you're looking for a delicious and refreshing dessert, give this key lime pie recipe a try. You won't be disappointed!
