I am an avid collector of recipes. A young lady, a former KFC employee, was looking at my recipes one evening when she discovered this one. She told me that the recipe was close, but that I should remove the vinegar and lemon juice and replace them with tarragon vinegar. Tarragon vinegar is the secret. Note: This is one of the recipes I adopted in the Great 'Zaar Orphan Adoption of 2005. I hope you enjoy it.

4 1/2 teaspoons tarragon vinegar
6 1/2 tablespoons vegetable oil
3/4 cup chopped onion
2 1/2 cups Miracle Whip
1 cup sugar
2 carrots
2 heads cabbage

Steps:

  • Mix oil, onions and sugar.
  • Add tarragon vinegar.
  • Fold in Miracle Whip.
  • Pour over grated carrots and cabbage.
  • Fold in well.
  • Refrigerate in an air-tight covered dish.
  • Best if made the night before serving.
  • The tarragon is the secret seasoning.

I copied these ingredients from the KFC coleslaw container years ago. Yes, they did list Miracle Whip, not mayo! It always goes quick, but I never get any compliments when I bring it as a dish to pass because they all think that I just picked it up from KFC and put it in my own bowl! I use the bags of coleslaw mix from the produce section of my store and chop it in the food processor, but you can use a 1 lb head of cabbage, and a couple of carrots instead if you wish.

1 (1 lb) bag Coleslaw (in produce section of store)
2 tablespoons onions (grated)
1 cup Miracle Whip
2 tablespoons tarragon vinegar
1 tablespoon sugar
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon milk or 1 tablespoon cream

Steps:

  • Chop coleslaw mix in a food processor until chopped fine.
  • Add grated onion to coleslaw mix.
  • In separate bowl, mix together Miracle Whip, sugar, vinegar, salt and pepper.
  • Thin dressing mixture with milk or cream.
  • Stir dressing into coleslaw.
  • Refrigerate several hours or overnight.

I got this recipe off the internet, but haven't tried it yet. I liked the idea that it didn't call for buttermilk, which I never have on hand, but usually have sour cream. Wanted to post it here for easy access. Cooking time is refrigeration time. BTW, I realize that I could make homemade copycat buttermilk, but there's too much redundancy, with the milk and vinegar already in this recipe.

1 (14 ounce) package cabbage coleslaw mix
1/3 cup sugar
1/2 teaspoon salt
1/8 teaspoon ground pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup sour cream
1 1/2 teaspoons white vinegar
2 1/2 teaspoons lemon juice
1 -2 teaspoon finely minced onion (optional)
paprika (optional)

Steps:

  • Place coleslaw in non-reactive bowl.
  • Whisk together sugar and next seven ingredients thoroughly, plus onion if using.
  • Pour over coleslaw mix and stir to coat. May add paprika at this point, if desired.
  • Refrigerate at least 2 hours before serving.
  • Note: Mix may seem dry at first, but will loosen up after cabbage reacts to the dressing and releases it's moisture. Also, when I've made my traditional coleslaw recipe, I grate my onion, because I don't like the minced bits.

1/2 cup real mayonnaise
1/2 cup milk
1/3 cup sugar
1/4 cup Miracle Whip
2 teaspoons cider vinegar
2 teaspoons pineapple juice
1 teaspoon lemon juice
1/4 teaspoon coriander powder
1/4 teaspoon salt (or to taste)
1 teaspoon minced fresh white onion (use a garlic press)
4 cups finely chopped cored green cabbage
1/3 cup finely chopped peeled carrot

Steps:

  • ADD the following DRESSING ingredients into a large bowl: 1/2 cup real mayonnaise, 1/2 cup milk, 1/3 cup sugar, 1/4 cup Miracle Whip, 2 teaspoons cider vinegar, 2 teaspoons pineapple juice, 1 teaspoon lemon juice, 1/4 teaspoon coriander powder, 1/4 teaspoon salt (or to taste).
  • CUT 1-2 small wedges of white onion, each to the size of a garlic clove; PLACE onion wedge into garlic press; SQUEEZE onion pulp and juice to measure 1 teaspoon; ADD to other ingredients in bowl.
  • WHISK together DRESSING ingredients until smooth, creamy and opalescent, using a wire whisk.
  • CHOP COLESLAW ingredients to specifications, using a food processor if desired (4 cups cabbage should be cut to approximately 1/4 inch pieces; 1/3 cup carrots should be cut to approximately 1/8 inch thick x 1/4 inch long pieces.

1 pkg coleslaw mix (15 ounces, i use dole's)
2 Tbsp dried minced onion
1/3 c sugar
1/2 tsp salt
1/8 tsp black pepper
1/4 c milk
1/2 c mayonnaise
1/4 c buttermilk
1 1/2 Tbsp white vinegar
2 1/2 Tbsp lemon juice

Steps:

  • 1. Add coleslaw mix to food processor and blend until finely chopped. Remove from processor and place into large mixing bowl.
  • 2. In food processor, blend the 9 remaining ingredients and process until smooth and well blended. Pour over coleslaw and thoroughly mix until well blended.
  • 3. Cover bowl and refrigerate at least 4 hours or overnight before serving. 7 points per serving (1 1/2 cups)
