I also love Italian food and using Ranch in my recipe kicked it up a notch. I created this recipe for my family to enjoy. *Tip, powdered Parmesan works best for this recipe because it melts better in the sauce.

1 lb ground pork
2 1/4 cups parmesan cheese, grated, divided
1/3 cup plain breadcrumbs
1/2 cup plain Greek yogurt
1 egg
1 ounce Hidden Valley Original Ranch Seasoning Mix, divided
1 ounce hidden valley ranch fiesta dip mix, divided
1/2 teaspoon ground black pepper
1/4 teaspoon sea salt
2 (9 ounce) packages refrigerated fresh fettuccine
6 tablespoons margarine
3 cups whipping cream
1/2 teaspoon coarse black pepper
1/4 cup chives, chopped small

Steps:

  • Mix together the ground pork, 1/4 cup of the Parmesan cheese, bread crumbs, greek yogurt, egg, half of the Hidden Valley Original Ranch dressing/seasoning mix, half of the Hidden Valley Ranch Fiesta dip mix, pepper and salt with hands.
  • Roll into approximately thirty 1 1/2 inch diameter meatballs.
  • Place on 11x16 greased baking sheet and place into preheated oven at 350 degrees for approximately 20 to 25 minutes or until internal temperature reaches 165 degrees.
  • While meatballs are cooking, cook and drain noodles according to package;
  • In a large skillet heat margarine, whipping cream, the remaining Hidden Valley Original Ranch dressing/seasoning mix, the remaining Fiesta Ranch Dip Mix, and pepper on medium heat until slightly thickened. ( Approximately 7 to 8 minutes. Do not boil. )
  • Add remaining Parmesan cheese and continue to cook 2 to 3 minutes until cheese is melted.
  • Place cooked meatballs in skillet and coat with sauce.
  • Place fettuccine in serving bowl. Pour sauce and meatballs over fettuccine. Sprinkle chives over dish.

10 ounces frozen spinach, thawed and squeezed dry
1 shallot, finely minced
1 garlic clove, zested
1 tablespoon Hidden Valley Original Ranch Dips Mix
1 teaspoon ground black pepper
1/2 teaspoon salt
1/2 cup breadcrumbs
1/2 cup parmesan cheese, grated
1 egg, lightly beaten
2 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl combine all ingredients except olive oil. Work mixture with hands until all elements are thoroughly incorporated into one mass.

The Hidden Valley Original Ranch Seasoning Mix really adds alot of flavor to the Egg Rolls and the Dipping sauce.These got rave reviews from my family this weekend and they were gone in an instant. 1 tablespoon oil
2 tablespoons shallots, chopped
2/3 cup baby carrots, grated
1 lb ground chicken breast
1 1/2 tablespoons Hidden Valley Original Ranch Seasoning Mix
1 1/2 tablespoons soy sauce
1 teaspoon fresh ginger, grated
1 large garlic clove, mashed
1 tablespoon white wine
2 teaspoons cornstarch
1 teaspoon sugar
2 green onions, chopped
4 ounces fresh spinach, chopped
20 egg roll wraps
nonstick cooking spray
1/2 cup plain Greek yogurt
2 tablespoons sour cream
1 tablespoon soy sauce
2 tablespoons plum sauce
1 tablespoon Hidden Valley Original Ranch Seasoning Mix

Steps:

  • In a large skillet over medium heat, saute for 2 minutes shallots and baby carrots, stirring often. Add chicken breast, Hidden Valley Ranch Original Seasoning Mix, soy sauce, ginger, garlic, white wine, corn starch and sugar. Stirring often cook this mixture for about 7 to 8 minutes. Remove from heat and stir in green onions and spinach. Set aside to cool completely. This could be made the day or morning before.
  • Preheat oven to 400 degrees.
  • On the Egg Roll Wrapper package there is a diagram and instructions on how to assemble. If that isn't handy, here is my best description:.
  • 1) Take one wrapper and place it on a work surface in front of you with one corner facing you.
  • 2) In the middle put 1/4 cup of the cooled filling. Pull up the bottom corner and cover filling completely.
  • 3) Bring both sides in to the middle. Wet the remaining end with water, using your finger and roll the roll forward towards the wet end and seal.
  • 4) Place seam side down on a non stick sprayed baking sheet. Continue until all filling is used.
  • Spray all the tops with non stick spray. Bake for 15-20 minutes until nicely browned.
  • Mix sauce ingredients in a small bowl and dip, eat, dip, eat.

1/4 cup sriracha sauce, divided use (hot chili sauce)
1 tablespoon fresh lemon juice
1/4 cup fresh chives, finely chopped (plus additional for garnish)
1 1/2 cups Japanese-style bread crumbs (panko)
1 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix
1 teaspoon lemon zest
ground black pepper
1 1/4 lbs boneless skinless chicken breasts, cut into small pieces (about 1-1/2 inches in size)
salt
1/2 cup cornstarch
2 eggs
2 teaspoons water
1/2 cup vegetable oil

Steps:

  • In a medium size bowl, whisk together dressing, 2 tablespoons of the chili sauce, lemon juice and 2 tablespoons of the chopped chives until well combined. Set aside.
  • Combine bread crumbs, seasoning mix, 2 tablespoons of the chopped chives, lemon zest and 1/4 teaspoon pepper in the bowl of a food processor. Blend until well combined; transfer to a shallow dish.
  • Pat chicken dry with paper towels and lightly season with salt and pepper to taste. Place cornstarch in a shallow dish. Whisk the eggs, remaining 2 tablespoons hot sauce, and water in a medium bowl until blended. Dredge chicken in cornstarch, shaking lightly to remove excess.   • Heat oil to 350 degrees Fahrenheit in a large non-stick skillet over medium heat. I put together a birthday party with lots of freshly prepared food and cake that I prepared for my mom. I had help from my cousins and friends who were my assistants and servers. The party was a great success and I have been doing this ever since. I made this chicken dish 8 years ago and it was the only thing different my mom would eat so I made sure I perfected the dish just for her and of course others. I usually brine my chicken in a mixture of salt, brown sugar and water for at least 45 minutes

4 boneless skinless chicken breasts
2 tablespoons olive oil
1 Hidden Valley Original Ranch Seasoning Mix
1 lb fresh spinach
1/2 cup parmesan cheese
1/2 cup mozzarella cheese
1/2 cup seasoned bread crumbs
2 eggs, beaten
1 (6 ounce) can black olives, sliced (optional)

Steps:

  • Butterfly chicken breast and drizzle with olive oil.
