This is a different and delicious way to serve baked or rotisserie chicken. It's a Dutch recipe. We never have left overs. The prep and cook time does not include the time to bake a chicken. I usually start with a fresh hot rotisserie chicken from the grocery store.

1 chicken, seasoned with salt and pepper and baked in oven (or use a cooked store rotisserie chicken)
1 onion
6 tablespoons butter
1 teaspoon curry powder
1/4 cup flour
2 cups chicken stock (canned broth or bouillon is OK)
1/4 cup half-and-half cream or 1/4 cup milk

Steps:

  • Slice and saute onion in butter until lightly browned.
  • Add curry powder and flour and stir for a few minutes to absorb the butter and brown a bit.
  • Slowly add stock, stirring constantly to avoid lumps.
  • Simmer for approximately ten minutes or until thickened.
  • Meanwhile cut chicken into serving pieces and arrange on platter.
  • Add creme or milk to the sauce, stir and pour sauce over chicken.
  • Serve with rice.

1/4 cup flour
1/2 tsp. salt
1/4 tsp. pepper
2-1/2 lb. chicken pieces (white and dark meat)
2 Tbsp. butter or margarine, divided
1 cup coarsely chopped apples
1/2 cup chopped onions
3/4 cup BAKER'S ANGEL FLAKE Coconut, divided
1 clove garlic, minced
2 tsp. curry powder
1 Tbsp. flour
1-1/2 cups chicken broth
3 cups hot cooked rice

Steps:

  • Preheat oven to 450°F. Mix 1/4 cup flour, the salt and pepper in medium bowl. Add chicken, one piece at a time; turn to evenly coat both sides. Place, skin-sides up, in single layer in shallow baking pan. Dot with 1 Tbsp. of the butter. Bake 15 to 20 min. or until chicken begins to brown.
  • Meanwhile, melt the remaining 1 Tbsp. butter in medium saucepan on medium-high heat. Add apples, onions, 1/4 cup of the coconut, the garlic and curry powder. Cook and stir until onions are tender but not browned. Stir in 1 Tbsp. flour and the chicken broth; bring to boil. Remove from heat. Reduce oven temperature to 350°F.
  • Pour sauce over chicken; sprinkle with the remaining 1/2 cup coconut. Bake 20 to 25 min. or until chicken is cooked through (180°F). Spoon rice onto serving platter; top with the chicken and sauce.

¼ cup butter, softened
⅛ teaspoon garlic powder
1 tablespoon chopped fresh parsley
5 cups honey-sweetened corn flake cereal
3 tablespoons chopped fresh parsley
1 ½ teaspoons garlic powder
1 teaspoon paprika
1 teaspoon salt
6 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
¼ cup buttermilk

Steps:

  • In a small bowl, stir together the butter, 1/8 teaspoon garlic powder, and 1 tablespoon of parsley. Spread the butter mixture 1/2 inch thick onto a piece of aluminum foil, and place in the freezer to harden.
