Yield Makes 4 skewers

Number Of Ingredients 18

1 tablespoon extra-virgin olive oil, plus more for grill and sauce
1 small onion, minced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/3 cup whole milk
4 slices white bread, crusts removed, and torn into 1/4-inch pieces (3/4 cup)
1 1/2 pounds ground lamb
1/2 cup feta cheese, crumbled
1/2 cup fresh cilantro leaves, chopped, plus 1/2 cup finely chopped for sauce
Kosher salt and freshly ground pepper
1 large egg, lightly beaten
1 cup plain whole-milk Greek yogurt
1/2 cup fresh cilantro or mint leaves, finely chopped
Zest of 1 lemon, plus juice of 1/2 lemon
Kosher salt
Extra-virgin olive oil
Pinch of cayenne pepper

Steps:

  • Make the kebabs: In a medium skillet, heat oil over medium-high. Add onion and cook until very soft and translucent, about 6 minutes. Add garlic, cumin, and coriander and cook until fragrant, about 2 minutes. Transfer to a large bowl; let cool.
  • In a small bowl, pour milk over bread and let soak 5 minutes. In a large bowl, combine lamb, feta, cilantro, 1 1/2 teaspoons salt, 1 teaspoon pepper, egg, cooked onion mixture, and bread mixture. Use your hands to mix gently until combined (do not overmix). Refrigerate until chilled.
  • Divide meat mixture into 4 equal portions, then form each portion around a 3/4-inch-wide flat metal skewer, leaving about 1 1/2 inches at each end. Transfer kebabs to a baking sheet, cover with plastic wrap, and refrigerate until chilled or up to overnight.
  • Preheat grill for direct-heat cooking (or a grill pan over medium-high). Brush grates with oil. Grill kebabs, turning as needed, until cooked through and charred in spots, and a thermometer inserted into the center reaches 140 degrees (medium-rare), 6 to 8 minutes.
  • Make the sauce: Combine yogurt, cilantro, and lemon zest and juice in a small bowl. Season with salt; drizzle with olive oil. Sprinkle with cayenne before serving.

Tamarind-Glazed Lamb Skewers with Dried-Apricot Relish image

Categories     Fruit     Lamb     Apricot     Summer     Grill/Barbecue     Tamarind     Bon Appétit

Yield Makes 6 appetizer servings

Number Of Ingredients 16

Glaze
1/2 cup seedless unsweetened tamarind paste*
1/2 cup fresh orange juice
1/3 cup mild-flavored (light) molasses
1 teaspoon dried crushed red pepper
3 tablespoons fresh lime juice
Apricot relish
2 cups chopped dried apricots
6 tablespoons fresh lemon juice
1/3 cup chopped fresh cilantro
2 tablespoons minced seeded red jalapeño chilies
2 tablespoons (packed) golden brown sugar
2 tablespoons cracked coriander seeds
2 pounds boneless leg of lamb, cut into 1/2-inch pieces; or 4 pounds lamb shoulder chops, fat trimmed, meat cut into 1/2-inch pieces
1 large red onion, cut into 1/2-inch cubes
20 (about) 12-inch metal skewers

Steps:

  • For glaze:
  • Bring first 4 ingredients to boil in small saucepan over high heat. Reduce heat and simmer until reduced to 1 cup, stirring occasionally, about 8 minutes. Remove from heat. Stir in lime juice.
  • For apricot relish:
  • Mix apricots and next 5 ingredients in medium bowl to blend. Season relish to taste with salt and pepper. (Glaze and relish can be made 1 day ahead; cover separately and chill. Bring relish to room temperature. Stir glaze over medium heat until heated through.)
  • Thread lamb and onion pieces onto skewers, using about 6 onion and lamb pieces per skewer. (Skewers can be prepared 1 day ahead. Cover and chill.)
  • Prepare barbecue (medium-high heat). Sprinkle skewers with salt and pepper. Grill lamb to desired doneness, turning once and basting with glaze during last minute of grilling, about 2 minutes total for medium-rare. Transfer skewers to platter. Serve with relish.
  • Available at Indian markets.

Tips:

  • Use high-quality lamb mince for the best results. Ground lamb shoulder is a good option.
  • Add some finely chopped onion, garlic, and herbs to the lamb mince for extra flavor.
  • Soak the wooden skewers in water for at least 30 minutes before using to prevent them from burning.
  • Shape the lamb mince mixture into long, thin kebabs and thread them onto the skewers. Press the mince mixture firmly onto the skewers to prevent it from falling off during cooking.
  • Cook the kebabs over a medium-high heat until they are cooked through. Turn the kebabs regularly to ensure even cooking.
  • Serve the kebabs immediately with the tamarind sauce and your favorite accompaniments, such as rice, salad, or pita bread.

Conclusion:

These lamb kebabs with tamarind sauce are a delicious and easy-to-make dish that is perfect for a summer cookout or party. The kebabs are juicy and flavorful, and the tamarind sauce adds a tangy and sweet flavor. This dish is sure to be a hit with your friends and family.
