BROILED CHICKEN WINGS

Broiled Chicken Wings image

This recipe comes from a book that claims this was an original recipe from Buffalo, NY. Beats me. I know this is quick, simple and has less clean up effort than frying. A local restaurant prepares them this way also.

Time 37m

Yield 4 serving(s)

Number Of Ingredients 8

2 1/2-3 lbs chicken wings, segments
vegetable cooking spray (Spray Pam)
1/4 lb butter or 1/4 lb margarine
2 tablespoons vinegar (cider or white)
1 -5 tablespoon louisiana hot sauce, adjust to your heat level (not Tabasco!)
blue cheese or ranch salad dressing, for dipping
carrot stick
celery rib

  • Preheat Broiler.
  • Line bottom of broiler pan with foil (for easy clean up). Add a small amount of water, about 1/4 cup. (optional).
  • Spray top part of broiler pan with Vegetable Spray Oil (Pam).
  • Arrange chicken wing segments, top side down, on broiler pan.

Yield 4 servings

Number Of Ingredients 6

2 pounds chicken wings (flats and drumettes attached or separated)
1 tablespoon vegetable oil
1 teaspoon kosher salt, plus more
1/2 teaspoon freshly ground black pepper, plus more
1/4 cup (1/2 stick) unsalted butter
1/3 cup hot sauce, such as Frank's

Steps:

  • Pat wings very dry with paper towels. Toss wings, oil, 1 tsp. salt, and 1/2 tsp. pepper in a large bowl to coat.
  • Melt butter in a small pot over medium-high heat. Remove from heat, stir in hot sauce, and set aside in a warm place.
  • Prepare a grill for two zones, medium and medium-high, or heat a grill pan over medium. Working in batches if necessary, grill wings over medium heat, turning occasionally, until skin is starting to brown and fat is rendering, about 12 minutes. Move wings to medium-high zone of grill or increase heat under grill pan to medium-high. Cook wings, moving to a cooler section of grill or reducing heat if they start to burn, and brushing with about 1/4 cup hot sauce mixture during last minute of cooking, until cooked through, an instant-read thermometer inserted into the flesh but not touching the bone registers 165°F, and skin is crisp and lightly charred, 5-10 minutes.
  • Pour remaining sauce into a large bowl, add grilled wings, and toss to coat. Season with salt and pepper and serve immediately.

Yield 12 wings, 4 serving(s)

Number Of Ingredients 4

1 lb chicken wings
2 (12 ounce) bottles dark beer
1 cup barbecue sauce (I used Sweet Baby Rays Honey BBQ Sauce)
1/8 cup Frank's red hot sauce (I used Franks Red Hot Wing Sauce)

Steps:

  • Place wings in large pot in one layer so that wings are just touching. Pour in beer and enough water to cover the wings.
  • Bring to a boil.
  • Reduce heat to Medium-High. Let cook so that there is no visible pink, turning frequently, about 20 minutes.
  • Transfer wings to plate, cover, and set aside.
  • Pre-heat broiler on High.
  • In a container with lid, combine BBQ and wing sauce.
  • Lightly brush wings with 1/4 cup of sauce.
  • Broil on High for 8 minutes, turning half way through.
  • Place wings in lidded container with remaining sauce shake to coat thoroughly. Serve hot with your choice of garnish.
  • Ms Ines recommends pineapple slices (grilled is best) and plantain chips.
  • Tips: For hotter wings, add a 1/8 cup more of wing sauce. Also, you can boil the wings ahead of time and keep refrigerated or frozen and begin at Step 5 with thawed wings for spur of the moment entertaining.

Tips:

  • Choose the right wings: Look for wings that are plump and have a good amount of meat on them. Avoid wings that are thin or have a lot of sinew.
  • Pat the wings dry: This will help them crisp up in the oven. Use a paper towel to pat the wings dry before seasoning them.
  • Season the wings generously: Use a variety of spices and seasonings to flavor the wings. Some popular options include garlic powder, onion powder, paprika, chili powder, and salt and pepper.
  • Marinate the wings: If you have time, marinate the wings in a mixture of olive oil, soy sauce, and your favorite spices for at least 30 minutes. This will help the wings absorb more flavor.
  • Broil the wings: Broiling is a great way to cook wings because it gives them a crispy exterior and a juicy interior. Place the wings on a baking sheet lined with parchment paper and broil them for about 10 minutes per side, or until they are cooked through.
  • Serve the wings with your favorite dipping sauce: There are many different dipping sauces that you can serve with wings, such as ranch dressing, blue cheese dressing, or barbecue sauce. Choose a dipping sauce that you enjoy and that complements the flavor of the wings.

Conclusion:

Broiled wings are a delicious and easy-to-make appetizer or main course. By following these tips, you can make sure that your wings are cooked perfectly and that they are packed with flavor. So next time you're looking for a quick and easy meal, give broiled wings a try.
