MAMA'S BUTTERMILK COCONUT PIE

Mama's Buttermilk Coconut Pie image

My mama showed me how to make this pie about 40 years ago, just as her mama showed her how to make it. I was 6 when Mawmaw passed away, but I can still remember her cooking in the kitchen in her beautiful cotton dresses dusted with flour. I am honored to teach my daughter how to make this dessert, too. -Lisa Allen, Joppa, Alabama

1 1/4 cups sugar
2 tablespoons all-purpose flour
1/2 cup butter, melted
3 eggs, beaten
1/2 cup buttermilk
1 teaspoon vanilla
3 1/2 ounces flaked coconut, divided
1 unbaked 9-inch pie shell

  • Pour mixture into shell.
  • Sprinkle with remaining coconut.
  • Bake at 325 degrees for 1 hour or until set.

Tips:

  • To make sure your pie crust is flaky and delicious, use a combination of butter and shortening. The butter will give the crust a rich flavor, while the shortening will help it to stay flaky.
  • When you're rolling out the pie dough, be sure to do it on a lightly floured surface. This will prevent the dough from sticking.
  • If you don't have a pie plate, you can use a 9-inch round baking dish instead. Just be sure to trim the excess dough around the edges.
  • Before you pour the buttermilk-coconut filling into the pie crust, pre-bake the crust for 10 minutes. This will help to prevent the crust from getting soggy.
  • When you're baking the pie, place it on a baking sheet to catch any drips. This will help to keep your oven clean.
  • Let the pie cool completely before slicing and serving. This will allow the filling to set and the flavors to meld together.
